This past Monday I made a big batch of lime frosting/ pudding recipe of yours with fresh org raspberries. Made parfait style. Tucked a ginger snap cookie in on top!!! Perfect combo!

These look so goregous :D the ones I remember making growing up were more of a firm dough, but then again, we would flatten them with a rolling pin until they were super thin, so this seems like a really good way to get a more whole food and vegan way of making them :)! We would always make the heartshaped variants (with cut-outs), but that might be hard with these... and yesss, I'm so happy that you brought up the wish tradition :) rather than just tapping with the finger though, the way we always did it was with one of the middle joints ("knuckles"?) of the pointer finger :) this made me really happy to see, and you're just always such a joy :D what a fun blooper reel too ^^ thank you for sharing

They don’t give out the recipes ..they want you to purchase the books …so I’m not a fan of these two .. I do like Rip Esselstyn …as he gives out recipes so I bought his books and listen to his podcast …

Yes, not Swedish gingercookies but I bet they taste fab :)
What kind of flour?
This is not a traditional recipe. Here in Sweden we use ground ginger, not raw. We don't use black pepper either. Or apple cider vinegar.

What flour was used?
I think Oat? I saw one of the commenters mention she made them and thought the variation in the cookies was due to the oat flout😊
