Rock Cake/Coconut Drops/Rock Bun Recipe.

This simple Coconut Rock Cake is a flavorful and delicious snack.
It’s a must Try!
Ingredients
2 Cups (all purpose flour)
1 tsp baking powder
1/4 tsp salt
1/2 tsp grated nutmeg
1/2 tsp lime zest
1 Cup Grated Coconut 🥥
1/2 cup butter
1/2 cup sugar
1/2 cup Currants or Raisins (optional)
1/4 cup mix peel (optional)
1 egg
3- 4 tbsp milk
1 tsp vanilla essence
*Instructions*
Seive flour, baking powder, salt and nutmeg in a container. Add cold butter and rub into flour until it resembles bread crumbs .
Add sugar, grated coconut, raisins or currants and mix peels and mix well. Whisk eggs with vanilla essence and milk.
Add egg mixture to dry ingredient and mix using a spoon to form dough.
On a large baking pan use spoon to drop the dough on the baking pan to make 6-8 equal rock cake.
This recipe gives 6 -8 Perfect Rock Cakes
Bake at 170 degree or 350 for 25-30 minutes
