Hi Karolyn! Love your videos! They have been a big help and motivation! Question on your fondant decorations… How soon can you start making fondant decorations? Do you think that will matter? Or should you wait until you have your cakes filled and iced so you can measure for size?
I personally like to wait until I have the cakes frosted and in the fridge. That way, I can measure where I want it to be on the cake and make it the correct size. For things like toppers, if you know the size of the top tier, then you know how big it can be. In that instance, you can make it ahead of time!
I make them between 1-5 days in advance. If I need them to dry hard (like a topper that needs to stand on its own), I will make it 4-5 days in advance. I either store them flat at room temp if I want them to dry flat. Or I will store them on a cake dummy (at room temp) the size of the cake it's going on so it can dry with a curve to it. If I want it to stay pliable, I will store it in a ziplock bag. I hope that helps!
I saw that you were taking calls! I may need your help I’m having a hard time coming up with a cake idea for this cake maybe I’m over thinking the design and how wide it’s gonna be. Cause it’s going to be a 2 layer 12-inch cake

I hear that people microwave the icing to deepen the color. Search for that and you'll find tons of videos on it!
