Depends on how much material you remove. There is a min thickness stamped on the rotors. For the GT500, it’s 38.0mm for the front. So far, my rotors have been good.
I put Hawk on my GT350, they were amazing...
I have Hawk HPS pads on the Brembos for my Terminator and I’m happy with them as a brand. Awesome that they make such a good track pad

Lots of dust… more than OEM pads. If you don’t go to the track, consider ceramic pads.
