We could try to develop a virus or poisonous gas that could potentially kill him. We've seen Saitama get sick before so that suggests that he has a normal immune system, however he's also managed to breathe in outer space. Basically his organ system and such isn't consistent so their might be opportunities to take advantage of that.

His punch turned a mountain into a valley, and his slap split the clouds. If a grenade is thrown underwater, the shockwave will mess-up your organs, and Saitama's punch is like a concentrated nuke. Making him punch anyone underwater just removes their chances of surviving. He didn't think about the meteor's debris doing collateral damage, so there's a chance that he'll miss the part about the hostages. Either way, everyone's screwed. Plus, the hero association would prolly send someone else more equipped for hostage rescues. Just because you're against Saitama doesn't mean he's the only problem.
To beat Saitama you either have to be a mosquito, beat him to a sale, beat him at video games OR out eat him. Saitama was KOed after an eating contest with Genos. There was a quote about his strength (I think it was wiki) but it states "Saitama's strength is such that it defies common sense". There was a wacky scene in the manga (won't mention it because spoilers) that really made me go "welp, that just happened". So pretty much he just defies all sense of reality lol.
