  • 咸鸭蛋是传统的古老食品,风味独特,色、香、味诱人,
    小时候在乡下农村,一年吃不上几次肉,没菜吃的时候吃一个,
    腌制后的咸鸭蛋是喝粥的佳菜,尤其再配上咖喱鸡更加完美啊!
    材料: Ingredients:
    30粒 鸭蛋 - 30 Duck eggs
    3朵 八角 - 3 star anise
    1条 桂皮 - 1 Cinnamon
    2公升 温水 - 2 liters Warm water
    660克 粗盐 - 660g salt
    100毫升 白酒 - 100ml Liquor

    我家咸蛋25天了,偷了一隻看,超棒,蛋白蛋黃分离了,但還不夠咸. 因為德國超市沒有鴨蛋,只有雞蛋, 不巧只買到 M size. 謝謝Uncle 最經典一句話 ;蛋浮起來,水夠咸了. 我腌制時就記住這句話。

    Aunty, first of all, thank you for teaching how to make salted egg using such simple ingredients. Just to let you know, in case it helps, making a salt solution by adding salt until it does not dissolves anymore is called making a "saturated" salt solution. However, as temperature increases, solubility of salt will increase. So if temperature of water is not the same, the amount of salt required to make a saturated salt solution will be different.     朋友们如果买不到鸭蛋,要用鸡蛋来腌制也可以,
    如果用鸡蛋,蛋白的部分就比较软也比较咸,

      以前鸭蛋没什么用處,煎,蒸,炒都沒鸡蛋好食,所以人们就想到拿耒腌制咸蛋,这里還有段故事 ,等安娣说给你们听,她知道的 !
      安娣,妳所说的鸡蛋,鸭蛋,我们都不在意,粉丝们都知道是用鸭蛋耒腌制,因鸭蛋比较大粒,蛋黄比较红,时常搞错话题才有真实感,沒有 N G的拍摄才好看 !

      市场上卖的因也要做回族的生意 ,所以 没用酒精。 一般上都是用 酸醋。

    Auntie, i did tis long2 ago with my mum. V just wash te duck eggs, dried overnight n put into te saturated salt water(tat's te science teacher in me talking). All te salted eggs turned up fine all te time after 1 month. But nowadays, te duck eggs cost te same as te salted eggs. Not worth d effort. But tq for bringing up te memories. ❤️❤️❤️

    蛋泘起來就會有一部分泡不到鹽水會壞掉,需不需要偶爾把它上下翻一下?
    雞蛋會出沙嗎?還是必須鴨蛋?

      Yes chicken egg also can👌. Only need 25 day, but d egg white will b a bit soft after cooked. Ok 👌👍.

      我看了影片的理解是,不拿出來就等於一直在醃製,會越來越鹹。影片裡他們有說:超過兩個月就很鹹,但還是很美。
      覺得可以試試25天的,30天的,35天的,如果要更鹹就40天或45天,甚至50天。
      在其他教學資料看到的:如果30天以後鹹淡的味道剛好,取出後要立刻用清水洗乾淨,擦乾以後放入冰箱冷藏保存,這樣吃到的鹹鴨蛋都是一個味道,不會很鹹。
