Something really touched me ... I saw a video (a long time ago), where Robin Williams was being interviewed. Robin said that he had been sober for 20 years. And, one night, he was at a party, and he was offered a drink. Because he had been sober for so long, he believed that he was totally in control ... and he told himself that he deserved just one drink, and that just one drink would not matter. But that one drink turned into several drinks ... until he got very drunk. The next day, he woke up on the couch of that party ... he had passed out and never left there. He was very scared ... but he went immediately to a liquor store. He took the alcohol home and drank alone the whole day ... until he passed out again. The next day, he checked himself into rehab. Addiction can ruin your life ... whether it is addiction to alcohol, or drugs, or gambling, or sex ... or sugar and binge eating. Some people can "have a cheat day" and immediately get back on track ... and some people can have a very tiny cheat (just a taste), and it is all over. Yes, it is scary.
@@pwnagejetsonjetson4118 alcoholism doesn't work like that. One drink and a person can lose control and fall all the way down to the foot of the mountain. This is the reason an alcoholic even sober for 20 years will tell you, "I'm an alcoholic." They know it never changes. It's a life long curse. Just one drink.... That's why I don't drink. I was never an alcoholic but I've seen what it does to people. I hate the stuff.
I made a commitment to myself to stay on carnivore (169 days today). I know myself. If I have one taste of sugar, I'm lost. I can't control myself. So, I eat before going out to a meal with friends. I tell them I'm on a medical elimination diet and they accept that.
That’s what I’m telling people as well, so they don’t get defensive about my choices or try to persuade me to not eat this way. Fortunately, it’s true, because I’m trying to heal a genetic disorder I’ve had my whole life.

I’m curious about the temperature of meat. I am new on carnivore. I love rare steak. How can you get a temperature in meat and have it rare. Is it safe to eat rare meat. I never buy nor eat any sweets. I have an aversion to sweets. And I don’t desire to have veggies. I love bread but all wheat products give me asthma. So carnivore is my choice. Only 3 days in. But since I never eat the other foods anyway so I think I can enjoy carnivore.
I'm a 73 year old retired American who lives in France. I'm 5'7''. Three years ago I weighed 254 pounds. Today I weigh 170. I've been carnivore for the past year, after a year and a half on Keto. The changes in my health have been simply incredible. But, I will not do perfection... I drink café crème usually 2 or 3 times a week at my favorite café, I have one glass of wine twice a month with dinner on Friday night when we go out with friends, and I will usually have one or two restaurant lunches a month where I will eat the "plat du jour", which is usually meat or fish and If there's a few potatoes or figs with the dish I'll eat them, but I won't eat other vegetables or salad. Other than that, I'm 100% carnivore when I eat at home. After all, what's the use of living if you have to be so good?
I am all for living in a way that makes you enjoy life. I don't see the point of being extremely strict about anything and then suffer because of that. I think it is what you eat for most of the time that really matters. The body is fully capable of being fed with something that is not that good for it as long it is only now and then. I have never been a fan of extremely strict diets, no matter what sort of diet it is. It is much easier for people to follow a diet if they are willing to treat themselves with something now and then and not follow the diet extremely rigidly all the time. I am in general a carnivore, but I am not extremely strict about it. I do at times eat some French fries when eating out and I do eat some types of fruit now and then.
I’d like to get to a comfortable weight first then might ease up. Never want to go back to carb addiction. You seem to have it all under control. I’d like that too. We’ll done.
Leave the steak out for 20-30 minutes before cooking Salt both sides and rub with little melted butter. Cook in a smoking hot pan to get that good sear. Turn once only. Once turned over, lower the heat, add butter and baste the butter over the steak until cooked to ideal temp. Blu - 40c Rare - 46c Medium Rare - 54c Medium - 60c Medium well - 65c These should be your rested temp so take out the pan 4c lower then stated. I used to eat grain-fed beef but switched to buying grass-fed beef from a local farmer. One noticeable difference that I found, was that the grass-fed beef is less fatty. I have also learned that grain-fed beef is higher in omega-6 where grass-fed beef is higher in Omega-3. If fat is flavor then grain fed does taste better but personally, I like adding high quality butter to my beef and getting the higher omega-3 in my diet.
From what I understand, the omega 3s in grass fed beef is extremely minimal anyway. You’d want to get your omega 3s from wild caught salmon or sardines or something.
Best steak: 1. Pat dry with paper towel and add salt & pepper generously all over. 2. Let the steak get close to room temperature. 3. Heat pan to very hot, on a high flame/temperature with a large nub of butter or other animal fat. 4. When the fat is sizzling put the steak into the pan and tap the sides if they curl up into the sizzling fat (don't press hard on the steak in any area). 5. Cook for X minutes each side depending on your favourite degree of rarity. If the steak is fairly thick I do 2.5 minutes each side, to make it rare. If the steak is thinner, it may need less time (getting the right timing based on the steaks you use is a matter of trial and error). This should result in the most delicious steak, a crispy crust on each side and succulent meat inside.
Instead of using butter, I would use Ghee butter. Butter contains proteins and they burn very quickly. So you can put a slice of butter on top of the already cooked steak. For frying stick to ghee butter or lard. That's what I do.
I’m struck by how calm, polite and down to earth all the carnivore woman I see on RUclips are. Not just women, Dr Chaffee, Dr Berry, Dr Shawn Baker…. So many and not one of them are obnoxious or outspoken. It’s kind of unique for me because as an ex vegan I’m used to loud, angry debates and lots of drama 😂😂😂 I’m definitely too old for that! I wasn’t referring specifically to women. I find Carnivores, both male and female, calmer people. They seem to have the capacity to listen without the need to interject and have their say. They are secure in who they are.
Well, the angry and downright strange behavior or some vegans could be due to a low fat diet, which can lead to hormonal inbalance, making it difficult to regulate emotions.
Myself and my wife recently converted to carnivore after 3 years on Keto, initially because I read it helped with IBS and Asthma which my wife suffers with. In iust 2 months her IBS and Asthma has all but completely gone, for the first time in years she can take full deep breaths without any tightness, pain or restriction whatsoever and hasn’t taken her pumps in weeks, we believe 100% this is purely down to Carnivore. Similarly with her IBS she hasn’t had any flare ups in ages, we could never go back to a normal’ way of eating, it’s been all positive since day 1.

I so needed to hear this today. I have been struggling letting go of Vegetables on and off, It made me feel like I couldn't do carnivore. Hearing how Elle struggled on and off for 6 months, it makes me feel like I will be able to do Carnivore consistency one day. Great interview.
Actually a gradual transition and weaning yourself from vegetables will produce less transition symptoms and I think make it more sustainable. Don’t beat yourself up or compare your journey to anyone else. Take it one baby step at a time and when you make a mistake or experiment, get back onto the path. I drifted from plant based to ketogenic to ketovore. I try to eat less than 20 grams a day of carbs. Taper off, stick to healthy, whole food and learn to substitute. I want crunch, I eat pork skins, I want candy, I eat a butter pat which I salt. Keep your goal as improving your health. You can accomplish your mission to optimize your health. I will keep you in my prayers.
In Australia, McDonalds beef patties are 100% Australian beef formed into Pattie’s and immediately snap frozen to retain freshness and flavour. They add salt and pepper once on the grill x
@@williambelmont9601 As the OP said, it's just 100% beef frozen patties placed on a (flat) grill. No oil or anything else used. I was a cook at McDonald's in California. Also, the eggs...scrambled, McMuffins...are just fresh whole eggs cracked right before you cook them. So many people don't know what they're talking about!
@@vanillaghetto I've ordered them quite a bit, they're always greasy as hell, and it's soybean oil. I wouldn't be surprised if they use veg oil as a preservative for freezing, something you'll see a lot with frozen foods - how oily they are.
@@williambelmont9601 You're wrong. Sounds like you've never actually met a pan, skillet, or flat iron grill, and cooked a burger yourself. Grease happens. Btw, when I was a cook at McDonald's, I used to get yelled at to drain the grease off of the patties more. You had to stick the spatula under the patty, and use the other hand to place a scorched finger on the patty, and hold it up to vertical, then gently shake it. And do this for dozens and hundreds of sizzling hot burgers, repeatedly...while loads of other buzzers are going off, buns are needing to be condimented, while shift supervisors are yelling at you, etc., etc. This is the reality. Not fun. However, no oil is used on the grill, or on or in the burgers.
It's perfectly possible to sometimes eat "socially" or indulge in something if you have selfcontrol. I went carnivore and love meat, fish, egss, have no problems eating only those things, but if I go out with friend for a pizza or they bring a cake for a birthday - I do eat it in moderation, that one time, like once in 2 months or something. I eat it and simply don't keep on eating the same, the next day it's carnivore again. That ONE and very ocasional meal doesn't really mess with you. My health is better, my weight is better... but yeah, you need self-control.
I've often thought like that, I can't. I decide to go off of my eating plan only if specifically, with/invited to eat with friends (rare for me) but then I think 'I might as well binge the while day, or the day before, and the day after, or the whole week'. For some of us, it's all or nothing.
@@markhatfield5621 Yeah, I'm a kind of person that makes changes in a drastic way. I say "So I'm not gonna drink Coke ever again" and then from the next day I don't. It's extreme and it simply works for me, but I wanted to say "Don't blame yourself for slipping up to the point you end up giving up. Accept it, use a bit more controle and you'll get there." I am a binger, while we're at it. Chips, ice cream.. I can eat a tone. I took a month to get it down to zero and sometimes tested myself, took a bit, ate a bag.. and the last time I took a giant piece of chocolate cake I felt so sick, bloated and physically bad I simply decided to just not do it anymore.
Doing less of something bad doesn’t make the action good. To eat junk food infrequently does not make junk food less harmful. The reason someone doesn’t cut out junk food from their life is because they think it adds value to their life. It really doesn’t. I’m absolutely not against you or your chosen way of eating. It is just that this way of thinking leads many to think that cheat meals aren’t harmful. They’re always harmful, independent of the frequency at which one consumes them.
I totally agree with what Dr. Chaffee says and Elle. I tried a carnivore diet as a teenager in the 70s. I lost 30 lbs of fat or more and put on muscle. I did not think it was sustainable at the time. I wish I had thought differently. I always felt better when eating a high protein/fat diet. Now at a more elderly age, I cannot tolerate vegetables and get very sick upon eating a meal that is high in vegetables.
I love the energy between these two! Elle is so soft spoken she should read audiobooks for us to soothe our excess carnivore energy so we can sleep! 😅 Great questions & conversation! I loved what Elle said about the occasional Mac-D patties with 2x cheese 🤭 I can be way too perfectionistic and tend to get lost in the weeds, so it’s good to hear this.
I mostly eat rib eyes, and I cook them very minimally. I sear them for several minutes on both sides, so that they have a crisp brown texture, which browns the fat and makes it taste super delicious. I keep the center rare. Salt it. It's very juicy that way, and the taste is better than when cooked to medium or well.

I love Elle and I totally get the social issue. I have been carnivore for about 6 weeks. I have cheated PLENTY of times during social occasions. But I also get back on it pretty quickly. She is very relatable and so sweet. ❤❤❤

Of course it’s better for kids than the crap in the market. Just remember how we evolved, breast milk and meat. It’s only a modern problem that kids are sick and allergic etc., all the time bec. of the garbage and fast food their parents give them, starting with formula. Quite a few carnivores whom I follow, feed their kids tons of meat and the kids are thriving; check out Laura Spath for starters.
I really hope that Elle can establish her own "followers" without having to be referred to as Dr Chaffee's girlfriend. She is great without this reference and has her own identity.
Talking about butter boobs. As a medical secretary, I was doing a course in the hospital I worked at 40 years ago, the medical educator stated “a woman’s pride, and a man’s pleasure consists of fat”. Made it sound most unattractive, but it is absolutely true. 😄

You also have to get around a few other ideas that are drummed into the public by the medical profession. One is that saturated fats are bad and another is that salt is bad. It’s a hard thing to get your head around but you do need to eat more fat and all the salt you want. But oh, the rewards…
As far as the calories question, I think you guys made a nice point about the packaging labels and how you shouldn’t eat anything you feel you have to check the label for. However, there are labels on meat, because meat has calories and such as well. I personally found that I was undereating on carnivore and as a result was still losing my hair and having energy problems. So I started loosely tracking my macros and it has helped so much. I will only be doing this for a little while until I can just eat the way my body needs out of habit. Eating until you are full is not applicable to all in the carnivore space, some of us have bodies that require more nutrients than just satiety can provide to have real healing effects long term. Many years ago I was buying steak at a butcher shop when a rugged cattle farmer who was standing next to me, (he was the real deal - had a deep Aussi suntan and wore an old battered Akubra hat), told me to never buy grain-fed beef because eating only grain tears the cattle's stomach to shreds. I have never bought grain-fed or grain-finished steak since that day. Another thing to consider is that modern grain is probably genetically altered and could be laden with pesticides and anti-fungal treatments.
Really nice interview! I was a bit shocked about the McDonalds conversation. I think that is fine in a real pinch, but the quality of the cows that end up as those patties seems highly dubious as well as they way they are handled before and after processing. I do think the quality of an animal’s life and the way it is butchered and processed makes a big difference in what you are putting into your body when you eat them. I would never trust the fast food supply chain to deliver quality meat.
This was a really good interview! Regarding farming and animal deaths, google the number of birds killed worldwide by pesticides each year according to the EPA. You’ll be astounded.
OMAD Carnivore has been the EASIEST thing I have ever done, I tired Vegetarian, Vegan, and Keto, and I was always hungry and they all turned into high carb diets. I started OMAD Carnivore October of 2023 at 232 lbs and this morning weighted in at 167 lbs, that is 65 pounds of weight lose in 8-months with little effort!

I didn't have any ups and downs with CARNIVORE. I started strict and haven't had a problem at all. I'm just odd and driven. I wanted to get metabolically healthy and get off my BP meds, which l did almost immediately. My BP dropped to 105/60. I couldn't continue taking BP meds. Of course I ran this by my Dr. He agreed I drop the pill.
Sounds like my husband. We started the same day. He was able to continue on and I was shaking with the sweats while trying to tend to children. I already have a high fat/protein diet so I thought I could do it. Nope. I also already fast 16 hours a day. I’m 5’1 and 135-140lbs. My husband hasn’t felt sick once and is doing great. I found out that I need a minimum of 15g of carbs a day to be okay mentally and be an available mother.
@@seadragon1456 Still try it. Continue as just an elimination diet; get rid of prepackaged foods, no McDonald's, etc. THROW OUT SEED OILS. You are just having carb withdrawal. Go slow, as you are feeling better, reduce/ eliminate something else. You can do this. We are all different. My twin sister watched me for at least 6-8 weeks til she said she had to start eating like I was, she could see a difference. Then.... She had KETO flu for about 3 days, and has now lost 40 lbs.
I make scrumptious perfectly done steaks in my Insta Vortex Air Fryer. Sirloins done to perfection as well as NY strip steaks and chuck steaks too. I prefer sirloin over rib eye any day and they’re less expensive. Friday nights I make chicken wings flavored with ground chipotle. Yummmy. And a few times per month I make meatballs with 80/20 ground beef often mixed with ground lamb. The batch I made yesterday was beef and chopped uncooked, zero-sugar bacon! Recipe is from Laura Spath, whose five year carnivore journey along with her husband and two kids is so inspiring and empowering.
Do not Pierce the meat place it on hot pan salting it 15 minutes prior as it sits getting to room temperature. Use tallow on the pan to brown the steak. 9 minutes each side as a measure.

The “cows are killing the planet” myth is pretty easy to debunk. One easy thing to point out is that there were twice as many bison in America before the US massacred them as there are cows now; I’d imagine the situation with Europe’s ruminants is going to be similar, though you’d have to go further back. A grazing heard of cattle in a range of undeveloped land is as natural as it gets, unlike fields of grain.
I had a similar issue on the back of my head with dry skin and irritation. For me, it was my moderately expensive shampoo that I used. I suffered for many years during my teens and early 20's. I finally read that you can develop an allergy to ingredients in your shampoo, so I changed shampoos until I found one that that did not cause the irritation. I have not had the irritation for over 20 years now.
Grass-fed vs. grain-fed . . . actually, both are grass-fed, until the last 60 days; the "grain-fed" is actually grain finished, to add fat and marbling to the meat - which improves the flavor, and increases weight for a better price at the sale barn. There ARE cows that produce meat which is nearly as well-marbled as grain-finished, but on grass only. The other thing is - grass-fed beef has a better balance of Omega 3 and Omega 6 fatty acids.
For me, it's not as easy as just eating something else for the day. The sudden insulin dump in response to carbohydrates can wreak havoc. It resulted in whole body itching and peripheral edema. Followed by a week of itching, and two months of severe peeling skin in hands and legs.
Omg! I am experiencing the exact same thing. Did it end after two months? My hands are swollen and cracked and peeling. Do you have any advice? Should I just ride it out ?
Could be oxylate dumping. Going from SAD to zero plants can shock the system. Look up Sally K. Norton. You might identify with the dumping symptoms. Going down slowly rather than quitting cold turkey is a much better route for some people.
Looking at the McDonald's Australia allergen listing, they show beef patties are seasoned on the grill with salt, pepper and sunflower oil. Not sure how much, but sunflower listed.
I wonder if a lot of people who go on the carnivore/keto diet tend to experience benefits because they have either a fungi (candida overgrowth) or bacterial(sibo) infection, so they cut out the sugar that feeds it and go only carnivore for years and thats why they experience benefits. If it works it works
A great reason to eat grass fed beef is that its best for the cow. They are out in the field living their best life. Grain fed beef is often corralled so they can be fed which breeds disease which means they are dosed with antibiotics which then ends up in the consumer. So while i love eating meat, i choose animals that are cared for, feed correctly and aren’t sick. Just a thought
What about all the healthy soil micro-organisms that are eliminated when the soil is prepared with chemical fertilizers and pesticides for agricultural crops? So bad for the environment.
These days I have to count calories to make sure I am eating above 2000 calories a day! Eating enough is a real struggle. Simply nuts! I never was like this!
Great interview! I can definitely taste a difference in grass fed we personally love it but I think taste depends on what type of grass they’re fed. We buy from a local farmer who practices regenerative farming & feeds off grass/legume fields and they bale their grass/legume hay for winter months. I’m not sure what type of grass, but it’s delicious beef way better than Kroger/Aldi’s grass fed beef and slightly cheaper on basically all cuts vs in store
Salt and pepper your steak first. Put in hot fry pan. LEAVE it there on 1 side until the cooked color goes 1/2 to 3/4 way up the side. It won't dry out like they say. Then you can flip it. Flip once only Cook the second side for as long as needed to get the color you want inside.
My favorite is to salt the steak for 24 hours before cooking it, smoke the steak at 225 degrees on a pellet smoker until it reaches 125 - 130 degrees, then sear the steak on both sides for 1-4 min (depends on the temp you sear at) and you end with a delicious medium/medium rare smoky delicious steak.
Today is 6/19/2023 I just cooked a New York strip and just used Redmond's salt and coated the pan with bacon fat and that was a tasty steak. It was about medium cooked. I thought it was really good.
Interesting video, thank you. One point the vegans are never interested in discussing is how vegetable farming and mono cropping of grains kill of the beneficial biologicals in the soil, whereas free range cattle actually increase it.
I always hear you don’t have to work out to have an amazing body on carnivore. I personally love weight training, but have been doing carnivore for two weeks. I decided to reduce my weight training to two days a week. I have not seen any changes in my body composition. I guess I’m concerned cause I feel like everyone talks about losing like 6-10lbs the first week. I feel like I’m holding onto body fat.
How old are you, Elle? You look like a 23-year-old model but when telling your story about a former marriage and having children you must be at least 35 or closer to 40. Congratulation on your great genes, Elle. I relate much more to your story than Chaffee's since I am a carb and sugar addict myself.
Butter boobs, YES! I have lost weight around my ribs and gone down 2 bra sizes, from 38 to 34/85 to 75. And my girls are still DD's. Butter is awesome!
All I can say is any Carnivore or potential Carnivore Google Barry Grove's video called "Homo Carnivorus" and you will understand exactly why Elle had a few life long illnesses go away and you will feel soooo confident in Carnivore being the right way to go. I was amazed and explains fully Dr Chaffee's views that may seem quite extreme to most but is exactly what Dr Groves illustrates quite convincingly with the ease of using nature with historical facts and observations. I think that you meant that the grass fed is gamier, not the grain fed or grain finished. Even the grass fed is often finished at the end with grains to put on the fat marbling. The grass fed has less fat and walks around free-ranging which uses their muscles more which makes them "gamier".
I'm really chemical sensitive & can ONLY EAT ---GRASS FED---BEEF mainly.....can't do all the roundup & chemicals sprayed on the grains......I also had CHILL BLAINS......they stopped when I went off GLUTEN....

This is the reason an alcoholic even sober for 20 years will tell you, "I'm an alcoholic." They know it never changes. It's a life long curse. Just one drink.... That's why I don't drink. I was never an alcoholic but I've seen what it does to people. I hate the stuff.

I made a commitment to myself to stay on carnivore (169 days today). I know myself. If I have one taste of sugar, I'm lost. I can't control myself. So, I eat before going out to a meal with friends. I tell them I'm on a medical elimination diet and they accept that.
I totally relate! Sugar has no part in my life because it is such a strong addiction for me.
That’s what I’m telling people as well, so they don’t get defensive about my choices or try to persuade me to not eat this way. Fortunately, it’s true, because I’m trying to heal a genetic disorder I’ve had my whole life.

I’m curious about the temperature of meat. I am new on carnivore. I love rare steak. How can you get a temperature in meat and have it rare. Is it safe to eat rare meat. I never buy nor eat any sweets. I have an aversion to sweets. And I don’t desire to have veggies. I love bread but all wheat products give me asthma. So carnivore is my choice. Only 3 days in. But since I never eat the other foods anyway so I think I can enjoy carnivore.
I'm a 73 year old retired American who lives in France. I'm 5'7''. Three years ago I weighed 254 pounds. Today I weigh 170. I've been carnivore for the past year, after a year and a half on Keto. The changes in my health have been simply incredible. But, I will not do perfection... I drink café crème usually 2 or 3 times a week at my favorite café, I have one glass of wine twice a month with dinner on Friday night when we go out with friends, and I will usually have one or two restaurant lunches a month where I will eat the "plat du jour", which is usually meat or fish and If there's a few potatoes or figs with the dish I'll eat them, but I won't eat other vegetables or salad. Other than that, I'm 100% carnivore when I eat at home. After all, what's the use of living if you have to be so good?
I am all for living in a way that makes you enjoy life.
I don't see the point of being extremely strict about anything and then suffer because of that.
I think it is what you eat for most of the time that really matters.
The body is fully capable of being fed with something that is not that good for it as long it is only now and then.
I have never been a fan of extremely strict diets, no matter what sort of diet it is.
It is much easier for people to follow a diet if they are willing to treat themselves with something now and then and not follow the diet extremely rigidly all the time.
I am in general a carnivore, but I am not extremely strict about it.
I do at times eat some French fries when eating out and I do eat some types of fruit now and then.
Some of us like being pain free. So being carnivore IS being good.
I’d like to get to a comfortable weight first then might ease up. Never want to go back to carb addiction. You seem to have it all under control. I’d like that too. We’ll done.

Leave the steak out for 20-30 minutes before cooking
Salt both sides and rub with little melted butter.
Cook in a smoking hot pan to get that good sear.
Turn once only.
Once turned over, lower the heat, add butter and baste the butter over the steak until cooked to ideal temp.
Blu - 40c
Rare - 46c
Medium Rare - 54c
Medium - 60c
Medium well - 65c
These should be your rested temp so take out the pan 4c lower then stated.

I used to eat grain-fed beef but switched to buying grass-fed beef from a local farmer. One noticeable difference that I found, was that the grass-fed beef is less fatty. I have also learned that grain-fed beef is higher in omega-6 where grass-fed beef is higher in Omega-3. If fat is flavor then grain fed does taste better but personally, I like adding high quality butter to my beef and getting the higher omega-3 in my diet.
From what I understand, the omega 3s in grass fed beef is extremely minimal anyway. You’d want to get your omega 3s from wild caught salmon or sardines or something.
Best steak:
1. Pat dry with paper towel and add salt & pepper generously all over.
2. Let the steak get close to room temperature.
3. Heat pan to very hot, on a high flame/temperature with a large nub of butter or other animal fat.
4. When the fat is sizzling put the steak into the pan and tap the sides if they curl up into the sizzling fat (don't press hard on the steak in any area).
5. Cook for X minutes each side depending on your favourite degree of rarity. If the steak is fairly thick I do 2.5 minutes each side, to make it rare. If the steak is thinner, it may need less time (getting the right timing based on the steaks you use is a matter of trial and error).
This should result in the most delicious steak, a crispy crust on each side and succulent meat inside.
Instead of using butter, I would use Ghee butter. Butter contains proteins and they burn very quickly. So you can put a slice of butter on top of the already cooked steak. For frying stick to ghee butter or lard. That's what I do.
Also, salt the steak/protein at least the night before so it can penetrate all the way through.
Also, have it cooked by a handsome wealthy doctor. 😂
Alternatively cook it how you like it
I’m struck by how calm, polite and down to earth all the carnivore woman I see on RUclips are. Not just women, Dr Chaffee, Dr Berry, Dr Shawn Baker…. So many and not one of them are obnoxious or outspoken. It’s kind of unique for me because as an ex vegan I’m used to loud, angry debates and lots of drama 😂😂😂 I’m definitely too old for that!

Myself and my wife recently converted to carnivore after 3 years on Keto, initially because I read it helped with IBS and Asthma which my wife suffers with. In iust 2 months her IBS and Asthma has all but completely gone, for the first time in years she can take full deep breaths without any tightness, pain or restriction whatsoever and hasn’t taken her pumps in weeks, we believe 100% this is purely down to Carnivore. Similarly with her IBS she hasn’t had any flare ups in ages, we could never go back to a normal’ way of eating, it’s been all positive since day 1.

I so needed to hear this today. I have been struggling letting go of Vegetables on and off, It made me feel like I couldn't do carnivore. Hearing how Elle struggled on and off for 6 months, it makes me feel like I will be able to do Carnivore consistency one day. Great interview.
Actually a gradual transition and weaning yourself from vegetables will produce less transition symptoms and I think make it more sustainable. Don’t beat yourself up or compare your journey to anyone else. Take it one baby step at a time and when you make a mistake or experiment, get back onto the path.
I drifted from plant based to ketogenic to ketovore. I try to eat less than 20 grams a day of carbs. Taper off, stick to healthy, whole food and learn to substitute. I want crunch, I eat pork skins, I want candy, I eat a butter pat which I salt. Keep your goal as improving your health. You can accomplish your mission to optimize your health. I will keep you in my prayers.

In Australia, McDonalds beef patties are 100% Australian beef formed into Pattie’s and immediately snap frozen to retain freshness and flavour. They add salt and pepper once on the grill x
They're great if you're out and need food, but they cook them in the worst oils, so don't make it your whole diet.

Also, the eggs...scrambled, McMuffins...are just fresh whole eggs cracked right before you cook them. So many people don't know what they're talking about!

Btw, when I was a cook at McDonald's, I used to get yelled at to drain the grease off of the patties more. You had to stick the spatula under the patty, and use the other hand to place a scorched finger on the patty, and hold it up to vertical, then gently shake it. And do this for dozens and hundreds of sizzling hot burgers, repeatedly...while loads of other buzzers are going off, buns are needing to be condimented, while shift supervisors are yelling at you, etc., etc. This is the reality. Not fun. However, no oil is used on the grill, or on or in the burgers.
I love listening to Elle's story. I can relate to her much more than the other veteran carnivores that quit carbs cold turkey.
It's perfectly possible to sometimes eat "socially" or indulge in something if you have selfcontrol. I went carnivore and love meat, fish, egss, have no problems eating only those things, but if I go out with friend for a pizza or they bring a cake for a birthday - I do eat it in moderation, that one time, like once in 2 months or something. I eat it and simply don't keep on eating the same, the next day it's carnivore again. That ONE and very ocasional meal doesn't really mess with you. My health is better, my weight is better... but yeah, you need self-control.
I've often thought like that, I can't. I decide to go off of my eating plan only if specifically, with/invited to eat with friends (rare for me) but then I think 'I might as well binge the while day, or the day before, and the day after, or the whole week'. For some of us, it's all or nothing.
@@markhatfield5621 Yeah, I'm a kind of person that makes changes in a drastic way. I say "So I'm not gonna drink Coke ever again" and then from the next day I don't. It's extreme and it simply works for me, but I wanted to say "Don't blame yourself for slipping up to the point you end up giving up. Accept it, use a bit more controle and you'll get there."
I am a binger, while we're at it. Chips, ice cream.. I can eat a tone. I took a month to get it down to zero and sometimes tested myself, took a bit, ate a bag.. and the last time I took a giant piece of chocolate cake I felt so sick, bloated and physically bad I simply decided to just not do it anymore.
Doing less of something bad doesn’t make the action good. To eat junk food infrequently does not make junk food less harmful. The reason someone doesn’t cut out junk food from their life is because they think it adds value to their life. It really doesn’t. I’m absolutely not against you or your chosen way of eating. It is just that this way of thinking leads many to think that cheat meals aren’t harmful. They’re always harmful, independent of the frequency at which one consumes them.

I totally agree with what Dr. Chaffee says and Elle. I tried a carnivore diet as a teenager in the 70s. I lost 30 lbs of fat or more and put on muscle. I did not think it was sustainable at the time. I wish I had thought differently. I always felt better when eating a high protein/fat diet. Now at a more elderly age, I cannot tolerate vegetables and get very sick upon eating a meal that is high in vegetables.

I feel like even though I've been mostly carnivore since the early 2000's and am now strict carnivore, that I learn something from the community every time I listen to people talk or read posts in lives. I loved what Elle said about the occasional Mac-D patties with 2x cheese 🤭 I can be way too perfectionistic and tend to get lost in the weeds, so it’s good to hear this.
I mostly eat rib eyes, and I cook them very minimally. I sear them for several minutes on both sides, so that they have a crisp brown texture, which browns the fat and makes it taste super delicious. I keep the center rare. Salt it. It's very juicy that way, and the taste is better than when cooked to medium or well.

Of course it’s better for kids than the crap in the market. Just remember how we evolved, breast milk and meat. It’s only a modern problem that kids are sick and allergic etc., all the time bec. of the garbage and fast food their parents give them, starting with formula. Quite a few carnivores whom I follow, feed their kids tons of meat and the kids are thriving; check out Laura Spath for starters.
I really hope that Elle can establish her own "followers" without having to be referred to as Dr Chaffee's girlfriend. She is great without this reference and has her own identity.

You also have to get around a few other ideas that are drummed into the public by the medical profession. One is that saturated fats are bad and another is that salt is bad. It’s a hard thing to get your head around but you do need to eat more fat and all the salt you want. But oh, the rewards…

Everything we have been told to avoid eating has actually been good for us, just about. It is almost like there is a conspiracy to make us sick.
As far as the calories question, I think you guys made a nice point about the packaging labels and how you shouldn’t eat anything you feel you have to check the label for. However, there are labels on meat, because meat has calories and such as well. I personally found that I was undereating on carnivore and as a result was still losing my hair and having energy problems. So I started loosely tracking my macros and it has helped so much. I will only be doing this for a little while until I can just eat the way my body needs out of habit. Eating until you are full is not applicable to all in the carnivore space, some of us have bodies that require more nutrients than just satiety can provide to have real healing effects long term. Many years ago I was buying steak at a butcher shop when a rugged cattle farmer who was standing next to me, (he was the real deal - had a deep Aussi suntan and wore an old battered Akubra hat), told me to never buy grain-fed beef because eating only grain tears the cattle's stomach to shreds. I have never bought grain-fed or grain-finished steak since that day. Another thing to consider is that modern grain is probably genetically altered and could be laden with pesticides and anti-fungal treatments.
It does the same to humans, which is why so many of us have leaky guts!

Really nice interview! I was a bit shocked about the McDonalds conversation. I think that is fine in a real pinch, but the quality of the cows that end up as those patties seems highly dubious as well as they way they are handled before and after processing. I do think the quality of an animal’s life and the way it is butchered and processed makes a big difference in what you are putting into your body when you eat them. I would never trust the fast food supply chain to deliver quality meat.

OMAD Carnivore has been the EASIEST thing I have ever done, I tired Vegetarian, Vegan, and Keto, and I was always hungry and they all turned into high carb diets. I started OMAD Carnivore October of 2023 at 232 lbs and this morning weighted in at 167 lbs, that is 65 pounds of weight lose in 8-months with little effort!

I started strict and haven't had a problem at all. I'm just odd and driven.
I wanted to get metabolically healthy and get off my BP meds, which l did almost immediately. My BP dropped to 105/60.
I couldn't continue taking BP meds. Of course I ran this by my Dr. He agreed I drop the pill.

Sounds like my husband. We started the same day. He was able to continue on and I was shaking with the sweats while trying to tend to children. I already have a high fat/protein diet so I thought I could do it. Nope. I also already fast 16 hours a day. I’m 5’1 and 135-140lbs. My husband hasn’t felt sick once and is doing great.
I found out that I need a minimum of 15g of carbs a day to be okay mentally and be an available mother.

You are just having carb withdrawal. Go slow, as you are feeling better, reduce/ eliminate something else.

SV is a game changer when cooking steak.
I make scrumptious perfectly done steaks in my Insta Vortex Air Fryer. Sirloins done to perfection as well as NY strip steaks and chuck steaks too. I prefer sirloin over rib eye any day and they’re less expensive. Friday nights I make chicken wings flavored with ground chipotle. Yummmy. And a few times per month I make meatballs with 80/20 ground beef often mixed with ground lamb. The batch I made yesterday was beef and chopped uncooked, zero-sugar bacon! Recipe is from Laura Spath, whose five year carnivore journey along with her husband and two kids is so inspiring and empowering.
Do not Pierce the meat place it on hot pan salting it 15 minutes prior as it sits getting to room temperature. Use tallow on the pan to brown the steak. 9 minutes each side as a measure.

Honey does not come from bees. Honey comes from flowers. It is not an animal food. It is a plant food and that is why it is so sweet.
I have heard many carnivores call honey "bee's vomit" ... and just that thought makes me never crave it.
The “cows are killing the planet” myth is pretty easy to debunk. One easy thing to point out is that there were twice as many bison in America before the US massacred them as there are cows now; I’d imagine the situation with Europe’s ruminants is going to be similar, though you’d have to go further back. A grazing heard of cattle in a range of undeveloped land is as natural as it gets, unlike fields of grain.

I had a similar issue on the back of my head with dry skin and irritation. For me, it was my moderately expensive shampoo that I used. I suffered for many years during my teens and early 20's. I finally read that you can develop an allergy to ingredients in your shampoo, so I changed shampoos until I found one that that did not cause the irritation. I have not had the irritation for over 20 years now.
Grass-fed vs. grain-fed . . . actually, both are grass-fed, until the last 60 days; the "grain-fed" is actually grain finished, to add fat and marbling to the meat - which improves the flavor, and increases weight for a better price at the sale barn. There ARE cows that produce meat which is nearly as well-marbled as grain-finished, but on grass only. The other thing is - grass-fed beef has a better balance of Omega 3 and Omega 6 fatty acids.
For me, it's not as easy as just eating something else for the day. The sudden insulin dump in response to carbohydrates can wreak havoc. It resulted in whole body itching and peripheral edema. Followed by a week of itching, and two months of severe peeling skin in hands and legs.
Omg! I am experiencing the exact same thing. Did it end after two months? My hands are swollen and cracked and peeling. Do you have any advice? Should I just ride it out ?
Could be oxylate dumping. Going from SAD to zero plants can shock the system. Look up Sally K. Norton. You might identify with the dumping symptoms. Going down slowly rather than quitting cold turkey is a much better route for some people.

Looking at the McDonald's Australia allergen listing, they show beef patties are seasoned on the grill with salt, pepper and sunflower oil. Not sure how much, but sunflower listed.

I wonder if a lot of people who go on the carnivore/keto diet tend to experience benefits because they have either a fungi (candida overgrowth) or bacterial(sibo) infection, so they cut out the sugar that feeds it and go only carnivore for years and thats why they experience benefits. If it works it works
A great reason to eat grass fed beef is that its best for the cow. They are out in the field living their best life. Grain fed beef is often corralled so they can be fed which breeds disease which means they are dosed with antibiotics which then ends up in the consumer. So while i love eating meat, i choose animals that are cared for, feed correctly and aren’t sick. Just a thought

Great interview! I can definitely taste a difference in grass fed we personally love it but I think taste depends on what type of grass they’re fed. We buy from a local farmer who practices regenerative farming & feeds off grass/legume fields and they bale their grass/legume hay for winter months. I’m not sure what type of grass, but it’s delicious beef way better than Kroger/Aldi’s grass fed beef and slightly cheaper on basically all cuts vs in store

Salt and pepper your steak first.
Put in hot fry pan. LEAVE it there on 1 side until the cooked color goes 1/2 to 3/4 way up the side. It won't dry out like they say.
Then you can flip it.
Flip once only
Cook the second side for as long as needed to get the color you want inside.

My favorite is to salt the steak for 24 hours before cooking it, smoke the steak at 225 degrees on a pellet smoker until it reaches 125 - 130 degrees, then sear the steak on both sides for 1-4 min (depends on the temp you sear at) and you end with a delicious medium/medium rare smoky delicious steak.
giving up alcohol would be the hardest thing for me....
Today is 6/19/2023 I just cooked a New York strip and just used Redmond's salt and coated the pan with bacon fat and that was a tasty steak. It was about medium cooked. I thought it was really good.

One point the vegans are never interested in discussing is how vegetable farming and mono cropping of grains kill of the beneficial biologicals in the soil, whereas free range cattle actually increase it.
That and all the animals they displace and continue to delete so they don’t eat their crops.
grain feed will always taster better, cows are fattened up at the end on grains but all graze on grass before.

I always hear you don’t have to work out to have an amazing body on carnivore. I personally love weight training, but have been doing carnivore for two weeks. I decided to reduce my weight training to two days a week. I have not seen any changes in my body composition. I guess I’m concerned cause I feel like everyone talks about losing like 6-10lbs the first week. I feel like I’m holding onto body fat.

Grass fed means the beef has vitamin K2 Mk7 which directs calcium in your body to you bones and teeth rather than your arteries.....
How old are you, Elle? You look like a 23-year-old model but when telling your story about a former marriage and having children you must be at least 35 or closer to 40. Congratulation on your great genes, Elle. I relate much more to your story than Chaffee's since I am a carb and sugar addict myself.

All I can say is any Carnivore or potential Carnivore Google Barry Grove's video called "Homo Carnivorus" and you will understand exactly why Elle had a few life long illnesses go away and you will feel soooo confident in Carnivore being the right way to go. I was amazed and explains fully Dr Chaffee's views that may seem quite extreme to most but is exactly what Dr Groves illustrates quite convincingly with the ease of using nature with historical facts and observations. I think that you meant that the grass fed is gamier, not the grain fed or grain finished. Even the grass fed is often finished at the end with grains to put on the fat marbling. The grass fed has less fat and walks around free-ranging which uses their muscles more which makes them "gamier".

I'm really chemical sensitive & can ONLY EAT ---GRASS FED---BEEF mainly.....can't do all the roundup & chemicals sprayed on the grains......I also had CHILL BLAINS......they stopped when I went off GLUTEN....
Me & my wife tried grain fed brisket twice and ended up with nausea so avoid the fatty grain fed meat now
