So, Hollow Ataraxia is a direct "sequel" to the original Stay Night, released a year after in 2005. The quotation marks are there because it's technically a parallel world where everyone is happy and living their best life, as opposed to the tragic ends they can meet in the OG game, and that's the basic premise. However, since Ataraxia roughly means happiness in greek, I'll leave to your imagination wether or not this stays true, based on the tone of the openings and the title. To answer your question of wether characters follow through the series, it doesn't really happen all too often. Since this is a "sequel", the cast comes back yes, but most of the series and spiin-offs have their own casts, with maybe the occasional cross-series cameo.
Just so you know, this doesn’t have an anime. It’s solely a Visual Novel. Basically it’s a sequel to the Fate/stay night visual novel and deals with Shirou investigating why the Holy Grail War is restarting, as well as a new character, a woman named Bazett who is revealed to have been hired as a participant in the war.
So I just came across this video and love the reaction! A lot of the characters here carry through for this specific sequel because the main premise is that the people you see are stuck in a 4 day time loop (this was the quick flashes you mentioned reacting to the second opening you watched) so it is the Fate Stay Night characters plus at least 3 new ones. The big circle in the sky if you remember or have watched one of the anime like Fate Stay Night Unlimited Blade Works relates to the holy grail in some way but I don't want to spoil further than that. The changing colors of the grail and whatnot I'm not totally sure of the significance of myself lol. Lastly, I am 2/3rds of the way through the Hollow Ataraxia VN myself and with the stain-glass window imagery I have seen it in these OPs but not in the game yet so my guess is these stain windows plus those steps to some heaven place somehow relate to what might happen in the end. Again, I'm not there myself so only guessing. This VN has had a ton of great fun and emotional scenes already so I'm ready for a downright beautiful and poetic ending and I think these two things relate to the imagery of how that might end up looking.
Hollow Ataraxia is all about the underlying horror and weight hidden behind a picture perfect peace, which is why some of the imagery and songs look dark or melancholic, but the openings also have a so much casual or light hearted stuff. A lot of the game is mostly light hearted, but with constant small details that show the uneasiness and wrongness out of sight, which gives it a really unique feel of being both one of the most chearful and one of the heaviest Fate entries at the same time.

in the game there are multiple kinds of events, some help to learn about the characters, (like talking to lancer or rider) some are cute (like choosing which girl you want to take to the pool), some are funny (like... choosing which girl you want to take to the pool, and as a result what shenanigans will ensue), some break the fourth wall (like when you go to watch the Tiger movie with a Fate/Zero trailer), some are scary, some progress the plot, and some progress the "plot". There are some dark moments, like some of the battles where rider is involved, but there are also some light and cute moments, like helping caster cook, or wierd comedy moments. getting stuck with Rin in a magic chest, and calling for help only to phone Rin from another universe...
That "void" is not a stairway/staircase to heaven. On the contrary you could even call it a door to hell. As for these entries, there is a time loop happening in the game. Since this one has not been adapted "yet" I am curious how they would go about it. I think this one also adds "Avenger" in the mix, right?!?

ZERO is not strictly connected directly to stay night. The author of stay night, Kinoko Nasu, says that something similar happened 10 years before stay night.
