Manga, anime, specials and movies kinda follow their own storylines in MOST cases.
While GT directly followed DBZ (anime) the next week as a sequel and is based on the OG and Z anime up to that point, DBSuper(anime) and DBDaima are stories that would take place between all the classic events and are only based on manga events specifically (not the anime). Some movies are sequels to others, and may be based on either manga or anime, as they sometimes feature anime exclusive characters and concepts.
I should also mention that all the canon/non canon talk is nonsense. DBSuper alone has multiple versions of certain arcs. Stuff from movies, specials and filler episodes or even videogames may always appear in the other versions anyways (eg. Bardock, Broly, Vomi etc)

Because that's how he's supposed to look according to the manga colour, like how also coloured Piccolo's arms from red to yellow.

Nope. Kid buu Is called like that only because he looks like a kid, he Is actually the same Age as every other version of Majin buu

The rights to DragonBall Super are in a nasty legal dispute right now.
GT turned Goku into a kid and it was almost as bad a flop as what Super is. This won't end well.
