Another great video Rik. It took me years to make a decent 'BIR' (I know this is not BIR) curry after discovering the base gravy 'secret' and thanks to the likes of ALs channel for the recipes and know-how. However, after implementing your cooking techniques and the revelation of the onion paste my curries have gone to the next level. Not only that but this method is less hassle and its easier to scale up. Oh and putting some ketchup in my tomato paste for the madras enhances the dish despite what others may say. Thanks for sharing your knowledge.
