- In this video I demonstrate how to ice a cake smooth using a small straight spatula (amzn.to/1gDzjgb) and the "crumb coat" method. The icing is Wilton's Decorator Buttercream, which is available at most craft stores and on amazon (bit.ly/172Hk62). I have a recipe for decorator buttercream posted here: www.cakedarla.c... for those who prefer to make their own.
Cookie Gift Can Queen sells Sweetex Hi-Ratio shorting on Etsy for home bakers in small quantities for professional tasting icing. Just wanted to share with my fellow bakers a great find!
What is the icing that u used?
It's decorator buttercream. I have links in the video info posted above, but here's the recipe:
1 cup solid vegetable shortening
1 pound powdered sugar (make sure it’s proper sugar, not a sugar substitute)
1 tablespoon meringue powder
1 teaspoon vanilla-use clear vanilla if pure white icing is needed
2 tablespoons water
Mix all ingredients with an electric mixer until smooth and creamy, scraping down bowl as needed. An optional pinch of salt can be added to help tone down the sweetness. If using, dissolve the salt in the water so stray grains of it don’t wreak havoc in your icing later. If using a stand mixer, this recipe can be doubled.
This yields about 3 cups of icing stiff enough to pipe roses and figures. Add 1 teaspoon of water per cup of icing (or a tablespoon to the entire recipe) to thin the buttercream enough for piping stars, dots, basketweave, etc. Add an additional teaspoon of water per cup (2 teaspoons per cup or 2 tablespoons to the entire recipe) to thin the icing to where it’s ideal for icing cakes and piping smooth lines.
Thnku so much for ur rply. Can I use butter instead of shortening? I want to avoid coz of health issues
Sana Saeed Yes, just understand that if you use butter, the icing consistency will soften at room temperature, and it may not be a true white color, since butter is usually pale yellow.
