The Best Roast Chicken

    INGREDIENTS
    For the compound butter:
    - 2 tbsp unsalted butter, room temperature
    - 1 1/2 tsp dried thyme
    - 1 1/2 tsp salt
    - 3/4 tsp pepper
    - 2 tsp lemon zest
    - 3 cloves garlic, minced
    For the chicken and vegetables:
    - 5 lb chicken
    - 1 1/2 tbsp olive oil
    - 1 tsp salt
    - 1/2 tsp pepper
    - 1 1/2 lb carrot cut in large chunks
    - 2 bulbs fennel cut into 1/8-inch wedges
    INSTRUCTIONS
    - Preheat oven to 425°F.
    - In a small bowl, combine the butter, dried thyme, salt, pepper, lemon zest, and garlic. Mix together, evenly incorporating everything into the butter. Set aside.
    - Using fingers, gently separate the skin from the chicken without tearing the skin. Work fingers over the legs and thighs as well. Once the skin is separated, spread the butter mixture onto the meat under the skin. The butter may clump as it cools against the chicken. Place the tops of the fennel along with approximately 1 lemon inside the cavity of the chicken. Also at this point, truss the legs. Set aside.
    - Spread the prepared carrots and fennel on a roasting pan. Drizzle with olive oil, salt, and pepper. Set chicken on top of the vegetables and sprinkle with a small amount of olive oil, salt, and pepper. Roast in the preheated oven until the vegetables are tender and the chicken reaches 160°F. Remove the chicken and vegetables from the oven and allow the chicken to rest for 10 minutes. While resting, the chicken will reach 165°F.
    - After resting, carve the chicken and serve with the vegetables.

    This recipe turned out SOO delicious! ❤️ I added baby potatoes, onion, baby carrots instead of the regular sized carrots, mushrooms and used boneless skinless chicken thighs. Made a butter and olive oil mix and it turned out one of the best dishes I've ever made! Wish I could include pictures! 🙂

    Love this! You could use a cutting board with a lip or cut it right in the roasting pan to reserve all those beautiful juices!

    I have made many roast chickens over the years, but I love your "take" on a classic recipe! The compound butter with lemon zest and herbs! The roasted lemon, the fennel....I want to try this! Thank you for NOT peeling your carrots, too. We raise our own and I refuse to peel them because you're just eliminating vitamins and flavor. Do you raise your own fennel?     I wish I could find some good ol Iowa range fed chicken. Store bought is so fatty and no flavor. My gramma used to butcher chickens and make home made egg noodles and chicken. o the memories mmmmmm

    Was that salted or unsalted butter you started with before adding the other ingredients? This is an easy recipe to follow, and looks very delicious. ☮️💟

      He typically uses un-salted butter. I always use unsalted butter so that I can control the salt. Frankly.... I don’t know why they even make salted butter....

    QUESTION: I'm not fancy on fennel.. .. could you suggest a different something -or- just leave it out?? I cook, but, I always get stuck on the fennel issue. What do you think plz.. .. .. thx again.

    The chicken looks great but you are using your cutting board the wrong side. Just a suggestion to use the side that has the ridge. 😊

    Roast chicken takes 2hrs. to roast completely to done @ 350°F. No pink at all if cooked throughly!!
