    Pam, Luv the hair! Thanks for these "on time" squash recipes!
    I heard:
    4-1/2 to 5 cups of cooked squash, pureed in the blender.
    Make a Roux, using
    2T Ghee & 2T flour
    Add pureed squash to roux. Stir.
    Add 1/2 to 1c water to thin, if necessary. Stir.
    Add 1T granulated or one cube Chicken Bouillon. Stir.
    Add 1/4t Seasoning Pepper
    Add 1t Seasoning Salt. Stir.
    Stir in 1/2c Heavy Cream (or, substitute powdered milk)

    Great! Gotta try this one! My fav zucchini recipe- dip zucchini in a batter. I use one cup flour, one cup cornstarch, 2 tsp baking powder, 2 tsp baking soda, 2 tsp sugar, 2 tsp Italian seasoning,1 tsp garlic powder, 1 tsp garlic salt. The batter powder I put in a jar - sone of it I mix with ice cold water to make the batter and fry it. Even kids who hate vegetables love this.

    Zucchini (and pumpkin) soup tastes great with coconut milk, it can also be dried.

      I love the flavor of coconut milk. Not a big milk drinker and coconut milk can easily be reconstituted from dry (if you’re putting it into something warm). What a great idea for those of us who don’t keep fluid milk on hand.

    I too had read many yrs ago as to why they pulled squash from being able to pressure can it. But in my lifetime, I've canned thousands, yes thousands of quart jars of yellow squash. I've never seen it moosh together, it stays separate. Now yes, it is extremely tender but the pcs always were separate. My job at home was to can the produce, so my Mom put up 500 qt jars of squash yearly (4 kids and we all liked canned squash). I continue to pressure can squash sometimes, just don't use as much, only 2 in my household. Recipe looks yummy.

      Agreed, I have found the same to be true in my canned Veggie Soup with summer squashes. I can just look at them and see that they are not mushy blobs but true chunks of squash that are fully cooked. I will continue to can it this way.

    I had an incredible zucchini harvest last year and wanted to do more than grated and powdered to enjoy all year. I made zucchini soup and freeze dried it for delicious winter eating. I wanted it shelf stable so I only put in a splash of cream before FD, but added more when I rehydrated it. I gilded the lily by also adding fresh sweet corn and a touch of feta before FD. Such sweetness, richness, and crunch! Thanks for sharing your recipe :-)

    I use sunflower seeds to replace the ghee and cream, then use the flour to thicken. This works if you are vegan and the sunflower seed has great nutrition. I’m making some today as I have lots of zucchini to use up. Your hair looks quite nice today.

      @@Karen-bj7lc I was wondering the same thing. Although we are not vegan, we're really trying to limit our animal protein, especially dairy. Don't know why, but after years of enjoying cheese and dairy, it just started turning on me out of the blue. We have a son who is allergic to dairy and soy so we've learned to do without for somethings, but because he has a very picky palate so I haven't learned much for substituting for recipes, so any input there would be greatly appreciated.       @@Karen-bj7lc yes with some Ayer until smooth and creamy. I then add in the squash and spices and blend again until creamy. I had it for dinner last night and it was delicious.

    PAM! I made this soup yesterday and my husband and I were AMAZED at how delicious it is!! I boiled onions (will add celery, bell peppers next time) with the zucchini and added 2 slices of crispy bacon when blending!! SO GOOD! This soup is an excellent base for all kinds of flavors! Going to try taco flavor....maybe add some cheese and ground beef. The ideas just keep coming!

    This soup is to die for! I've made it 3 times since first watching! It's so delicious, creamy and yummy! I've canned a bunch of just the base of squash and broth pureed because Jim said we could do that. Then I heat it and eat it plain or add a splash of cream or finely grated cheddar cheese and thoroughly enjoy my meal. My tabby Tiger also fully enjoyed the spoonful that was left, lol. He thinks he's human and loves to share my food, like Garfield! Thanks Cindy for this awesome recipe, it's Scrumptious!

    I once read a newspaper article (food section) on NOLA style cooking titled "Youx Toux Can Doux a Roux." 🤣 It may be a little pricey but I swear by Hoosier Hill Farms heavy cream powder. It's a staple for me. It goes a long way and is soooo delicious.

    I just made this and it is incredible!!! Definitely the best dish with an abundance of zucchini! I pureed the other half (Pam put hers in fridge) & stuck it in the freezer. Easy to make another pot of soup another day. Yummy!!

    I have pressure canned zuccini and yellow squash together. I know, it's been removed, but I go for a longer time. I also agree that it gets mushy. But I use it in my squash casserole. Never had a problem.

      HOW MUCH time ? I still have shredded from last yr, in the freezer. I'd really like to pressure can it, in chunks, for soups, Scotch broths etc.

      @@nancyarchibald9095 I pressure can mine in quart jars at sea level, for 40 minutes, plus cool down time. Add 10 minutes per 1000 ft. of elevation. Though I've only done it with fresh, it shouldn't make much difference. Make sure to defrost completely before processing. Dont just take my word for it. Watch Homestead Heart and Wanda at Crazy Dazes, and more canners that do it every year. Good luck and happy canning. Blessings.

    I made this soup tonight and it was scrumptious! It didn't even need cream or thickening. I just added a can of chicken broth because I love Campbell's chicken broth for soups and then added some freshly grated parmesan cheese and some grated Colby jack cheese. Another commenter mentioned adding some bacon so I also added about 1/4 cup chopped bacon bits. It was so incredibly creamy pureed in my Vitamix! I plan on making this often during swash season! Thank you for sharing Cindy's recipe with us! I Just love your channel and appreciate all your and Jim's work to teach us all! Also love your hair! It looks so lovely!

    i make zucchini soup a lot. and your recipe looks so good. for people with dairy issues i use a potato in my soup to help thicken and i never use any kind of milk or dairy to thicken it. both ways are delish! Thanks for sharing Cindy's recipe!

    Mary on Richard's phone I would have used the water I was adding into the blender container gave it a whirl so I can clean the container as well as adding the water to the dish we need to start thinking about conserving water

    Definitely have to try this! Yum! Just to share a few things I do with Zucchini, I freeze it diced and shredded. I also can it as Zucchini Bread Jam (Ball Recipe) and Mock Pineapple. I’ve also made mock Zucchini Crab Cakes, recipe from That 1870’s Homestead, using shredded Zucchini instead of the crab (it was fantastic). You can also use it to extend sauces by adding Zucchini, which takes on the flavor of anything you put it in. I only had two plants this year, but they really produced great! Love your channel so much!! Thank you!

    I add a cup of zucchini to most every thing I make just to get more vegetables into what we are having for a meal. For example...spaghetti sauce, vegetable soups, meatloaf and meatballs. I puree it for adding liquid to things. Love your channel!

    I love that recipe. My daughter uses a similar recipe for pasta sauce. She cooks down the zucchini sauce a tad bit more and doesn't add the heavy cream. She adds a hefty spoonful of sour cream. The sauce freezes beautifully in serving size portions as well as single size portions of her favorite noodle at the time. She adds some sour cream at the time of use.

    We make a similar soup without the roux and often without the cream. Different spices and includes onions. Great cold or hot. I have even canned it on occasion.

    Might wNna try my zucchini casserole recipe. In skillet cook zucchini and onion in butter once cooked add stewed tomatoes with juice to mix put in casserole pan add in mozzarella cheese top with bread crumbs bake til cheese is melted. Hope you enjoy it freezed well

    Did not really think about using it as a soup. Tried it and is very good, THANKS! I tried it with the cooked zucchini and Knorr chicken cube. Good just like that, then added half & half. Still good. Added cheese on top with sour cream, Yep Good. Going to try to dry some zucchini to put back for this.

    Try adding an avocado with the zucchini when you puree. Won't need cream. I have made ice cream from avocado. It would probably be even better with both.

    Thank you for sharing this yummy recipe. I modified it a bit (used some onion water from some onions I blanched to dehydrate, thicken it a bit more).

    I watched your video making this soup. This is soooo scrumptious! My husband and I inhaled it as well. He was asking for more. I saved some for my mother-in-law. She is a very good cook. When I gave it to her, she kinda of wrinkled her nose. That evening, she called me staying how much she loved this soup and had never eaten (she is 85) zucchini soup before. Thank you Pam and Cindy.

    I like to dry thinly sliced zucchini and then layer it (dried) into lasagna. Adds flavor and you don't have a watery lasagna.

    Pam, I made this soup last year and we just couldn’t get enough of it. I even freeze dried a lot! Now the big question??? In a grid down situation you say we can use powdered milk if we don’t have cream. What brand of powdered milk do you prefer. Growing up it was awful, I know it has been improved so much. I want to get some in my storage but don’t want to spend a lot of money on powdered milk if it doesn’t taste good. Thank you and you will never know how many times I go back and rewatch your videos. Much better than TV. ❤

    My husband asked "is there more?" then he had more. I've made this soup twice now and we love it! Thank you so much for sharing the recipe and demonstrating the process for us!
    I'm thinking if I blanch and freeze my fresh zucchini in slices or cubes it would be easy to put the soup together in the winter months. Please correct me if I'm wrong.

    I saute my onions first, add the zucc and garlic and chick boullion with just enough water to cook them until mush. Then I blend with canned milk in blender.

    My rule of thumb for growing zucchini: only plant ONE zucchini plant. Otherwise, you end up trying to give it away in large paper grocery bags to the entire Los Angeles metropolitan area. (Okay, maybe just Torrance, Gardena, and PV, but still!) 😆This looks like an amazing recipe! Thank you for sharing it with us!

      I've never grown zucchini, but I've heard about how prolific they are.
      I read something recently where a man said that during zucchini season in his town, you had better lock your car doors when you go to church or else you will come out to find your front seat full of squash! 😄😄😄
      People look for anywhere to dump it.
      The mental image of it all, cracked me up.
      And I was born in Gardena many many many many years ago, so it was kinda fun seeing it in your comment.

    having an immersion blender at hand helps too. especially with the tower blender, always getting hot liquid splashing out if I add too much to the standard pitcher of the blender

    Instead of making a roux, I just add a couple of potatoes with the squash. When blended (I use a stick blender), it becomes thick. Add a dab of cream if you want but usually it is fine as is.

    Can you make a large batch and freeze it rather than store some cooked squash in the fridge? It looks fabulous!

    Don’t forget slicing zucchini, dipping it in a bit diluted egg mix, then into ground Parmesan. This doesn’t use up as many zucchini’s but most people esp children love these chips. Good on camping trips. I will definitely be making this soup. Sounds good!

    Thank you for your recipe. I've made a number of different zucchini main and side dishes recently since we had a nice crop from our garden this year. I have never eaten or made zucchini soup so this will be fun to try this new recipe. Tell Cindy thank you for sharing this recipe too.😊

    I use made this recipe exactly as given and it is absolutely addictively amazing!!!! I will cut back a touch on the bouillon and seasoned salt, just a touch, to lower the saltiness a little but otherwise it is perfect!! Thank you for sharing this recipe!!!
