Hey Brenda! Welcome to Bao Bei :) I would say no more than 2 days MAX. Leave it out for 1 day and if needed, fridge for day 2. But it really loses lots of quality after day 1 and can't be kept that long because there is egg in the custard. Let me know if you got any other questions

And make sure you're not overworking it on the second knead, just push the air bubbles out. Did you let the yeast rise?
