not exactly. if the casino catches you counting cards then they will ask you to leave the property but under no reason the may hold your chips. its not illegal to count cards so they can not call the cops.
Any of the casinos are good to go to. Las Vegas is corporate run so it's a completely different town now then it used to be. If you don't like your dealer, go to another table. If you don't like a casino, then go to the casino next door. I'm sure you'll eventually find a spot that you're happy with :-D

When someone counts cards the casino does consider it cheating even though what counting cards actually does is lower the percentage of the house edge, so technically it's not cheating. And counting cards is not illegal in Las Vegas, NV. But if the casino's catch you card counting then they will call the cops. Since the casino's are private property they can have you arrested for trespassing.
Vegas Aces. Based on your 5 years as a Blackjack Dealer, could you easily tell when there were many high cards remaining which favors the player and have you ever practiced and played using Card Counting?

Don't worry about messing up anything. There's nothing you can do, that a bunch of drunks haven't already done in the past. It takes a lot for a normal (sober) person to get thrown out. And I can understand why you would want your first time to be alone without other players. Some people can be rude to new players who don't know the specifics of the game. Just so you know, it's the dealers job to help teach new players how to play the game. The dealer will explain the rules as well as the best way to play the hand, so if you ever have any questions or need help with anything, feel free to ask your dealer. Years later Robert De Niro and Joe Pesci did movie called "Casino", depicting that very same Casino in 1980. Which pretty much explained my bad experience there in 1980. Evidently, that Casino had a very bad reputation in 1980, honesty wise. The mob ran it.

The dealer hits on 16 and lower and stays on 17 and higher. Depending on what casino you're at, the dealer may or may not hit a soft 17.

I have to disagree with the doubling down part.. The first time I went to the casino I double downed and won, the slot machines have much worse odds.
Slot Machines have a 85-95% payout. Blackjack can be 98-99% payout if you play perfect Basic Strategy and the Table Rules favor the Player.
