Spicy Tuna Crispy Rice Recipe
Ingredients:
For the crispy rice
2 rice cooker cups rice amzn.to/3tytYyo
2 rice cooker cups water
2 tablespoons rice vinegar amzn.to/3k0mTnb
2 tablespoons granulated sugar amzn.to/3lb7tM8
1 tablespoon salt amzn.to/3nqz4f7
Cooking oil of choice
For the spicy ahi
¼ cup kewpie mayonnaise amzn.to/3EaGitS
2 tablespoons sriracha amzn.to/3BZAUYq
1 teaspoon shoyu amzn.to/3C4yI1P
1/2 teaspoon sesame oil amzn.to/2XjkPxZ
½ pound sashimi grade ahi
2 teaspoons thinly sliced green onion
Garnish
Unagi sauce amzn.to/3EbSaeP
Green onion
Directions:
1. For the crispy rice: Rinse rice with cool running water until water runs clear. Add rice and water to a rice pot. Set to cook.
2. When the rice is done, transfer to a large bowl and set aside.
3. To a small bowl add vinegar, sugar, and salt. Mix until well combined. Place in the microwave and heat for 30-45 seconds or until the sugar and salt have dissolved.
4. Pour the vinegar mixture over the hot rice. Using a rice spoon, gently fold the rice until well coated. Set aside to cool slightly.
5. Next shape the rice into rectangles using slightly wet hands or a sushi mold.
6. Heat a skillet over medium high heat and add a thin layer of the cooking oil of your choice.
7. Once the oil begins to sizzle, add rice cakes and fry for a few minutes on each side until golden brown. Remove from oil and place on a napkin to drain excess oil.
8. For the spicy ahi: To a small bowl add mayonnaise, sriracha, shoyu, and sesame oil. Mix until well combined and set aside.
9. Next slice the ahi into small cubes about ½ inch thick.
10. Place ahi cubes in a bowl and add the spicy mayo mixture along with the green onion. Gently toss to coat.
11. Top rice cakes with a small spoonful of spicy ahi. Drizzle with unagi sauce and ENJOY!

Looks ono! I heard the crunch…do you recommend it for sensitive teeth? 🤔
Usually hot/cold can have a reaction with sensitive teeth. Crunchy seems to do well, but you'll have to try it out to see.
Do you think crispy rice with just the vinegar mixture of sugar and salt would taste good with gumbo?
Not sure. Never tried.
I've seen others especially Asians do this differently or the measurements are different and you should put the rice in the refrigerator!
