Most Noodle houses in the Philippines are using this Technique. They call it "Kabayo" as in Bamboo Horse.

傳統正宗的做法是純手工,師傅用大腿跨著竹篙重重複複地壓。刀切的麵條外形觀感都比機器出的好,麵條要有彈性和韌性吃起來彈牙爽口有嚼頭,加大紅浙醋和茄醬沾著吃,在廣州和香港有些店還會有傳統的醃鹹酸(白蘿蔔、菜椒圈、青瓜),雲吞麵入碗要雲吞在下麵在上滴幾滴豬油撒點韭黃,完美!
用竹子压面条那步好多余,最后不还是上了压面机吗
主要是讓麵筋按照期望的方式形成架構吧?壓麵機直接壓出來的話麵筋的架構會蠻差的,口感會不那麼好
主要是畫面拍起來好看,古時候沒有壓麵機,用竹子壓麵,看起來就有緬懷傳統、思古之幽情。其實單是用壓麵機橫的豎的反覆壓,最後的效果是一樣的。
實際上現在有代替人力版本的機……這視頻里反而切麵用機器而不是人手

Klasické nudlové těsto. Jen u nás se vyválí válečkem, nakrájí na tenké nudle a usuší. Nudle se pak zavařují do polévky. Nebo se z těsta dělají jiné těstoviny.

this method is dying fast in Msia and Spore. this video shows begining riding and kneading with bamboo and then the rest with machines. accordingly to what i hv seen and known. this is not 100 % bamboo ride kneading dough. However, I see lots of duck eggs being used here. Looks rich wanton noodles. tx for showing tutorial

I looked up on google. Their address is 38 & 40, Jalan Besar, 35500, Bidor, Perak Darul Ridzuan.
This restaurant is very famous for their egg noodles and the prawn wanton. Their duck soup 鴨腿麵. Must have when ever travelling up north.@@lowmad-qo8qo
You can easily find it in Guangzhou, China😅
i was in GZ last month and had many bowls of bamboo noodle won ton soups - amazingly delicious (low prices too)😋😋😋😋😋

Outdated labor waste old techniques. Why not just buy a noodle machine from Japan, and that can make any type of noodle you want

在泰国我见过这样干面 ,用大竹桶干面是广东人的面店 ,好像在曼谷的石龙军路 ,那是几十年前了,现在好像消失了。
