That looks so good! My abuelita and tias used to make this. I like my soup veggies to be on the soft side though. Carrots and celery take a little longer to get there, so would definitely sauté them first until fairly tender, then remove them and sauté the pasta.

I was dismantling a couple of big chickens so I had homemade broth which I used instead of water (including the chicken "paws"). Also increased the chipotle, just a matter of taste, of course. Happy New Years! This is new to me, eating it Valentina lol. I looove Valentina. I’ve only made sopa de pollo with fideo or conchas and veggies. Today is a really cold here in Japan and I made caldo de pollo with arroz. Perfect comfort food. Plus we’re in Restriction of Movement(ROM) since the 1st lol 2 kids and husband got sick so we’re stuck at home not able to leave the house at all for the moment 😔 Started the new year strong lol.

I love this I learned a tip from you but can’t I give you a tip my mother in law gave me cook the tomatoes sauce couple minutes before you add the rest of the broth ! ❤️try it I’ll try your tips too
I made this recipe this weekend, it was great! I also topped it with fresh cilantro. Next time I think I’ll only use 1/2 a pound of pasta because the noodles drink up a lot of the broth. :)
