Thank you for showing this, I wish more meat cutters would watch this! The shop I work in, I am the only one who cuts my Top Round this way. They all cut theirs with the grain and it drives me crazy! I keep showing them how to do it, but nope the revert back to cutting it with the grain.
With the grain is the best way to cut London Broil. When cooked they get sliced across the grain like brisket and are much more tender. Modern way sucks.
