    hey thanks for this video, I'm in Nicaragua and excited to do this for my first time. Here its equiv of $6.78 a pound, grass fed but not nearly as much marbling. Prime is prime!

    Jesus its a gorgeous loin. In Australia we call this cut Porterhouse which is standard here. We dont get this level of Marbling from the average suppliers, its lovely mate. Surely this isnt the average quality of NY strip in Usa. Youre a lucky man.

      Porterhouse steak here is a t bone with the larger part of the tenderloin attached

      Well it is the same cut that’s the majority of a porterhouse but in America a porterhouse is this with the Bone attached and the tenderloin on the other side of the bone

    Thank you for your video... I just ordered a big knife like that and a boning knife, and will be going to Costco to buy the big beef loin as you started with... Too bad we don't have a Costco where I live so I will be getting a ride with a friend to another City. Strip loin steaks are my favorite I like them better than ribeyes as I don't like the ribeye cap part.

      Sam's has decent prices, but you can also see if there is a local food service distributor like shamrock in town that has a public store. Albuquerque does and the loin is a little bit cheaper than Sam's, not much but savings are savings

    What do you do with the rendered fat??

      You pour it through a sieve to get rid of the bits that didn't melt, and you can use the liquid fat to cook with for added flavor. Feel free to freeze until ready to use.

      use it in your frying pan as you do with butter or veg.oil
