Hoping it’s OK for me to share this here, as I really want to tell someone about it! I’m so inspired by the pantry challenge, but I don’t actually have a pantry. I live in a small flat, and only have a dry goods cupboard and a tiny freezer. I’m also chronically ill, both physically and mentally, so my spoon drawer is empty most days. This is why I’ve started making freezer meals. I usually do that about 3 times a year, and I make everything from scratch those times (including bone broth). Having ready made meals in my freezer is invaluable for those days/weeks/months when I’m not able to do anything, but also leaves me with more energy to do the things I want when I have space for that in my life. I also live alone, so doing big freezer meals reduces my food waste so much! So, I made up my own pantry challenge. After a year best forgotten, my freezer and cupboard was neglected. I had no idea what was in them, and kept buying easy meals, or getting Hello Fresh boxes, and that isn’t really on my budget. I decided that my pantry challenge would be to fill my pantry (or freezer), setting me up for about 3 months of meals. I also wanted to use up as much of what was in my freezer and cupboard as possible. After last week, not only is my freezer filled to the brim with meals, I also sent about 34 dinner portions to my Mom, Dad and Grandma. And, I’m happy to say, the only “raw” food in my freezer at the moment is two chicken breasts, a tiny bit of vegetables and some berries. It feels so good, and I’m so proud of myself! To those of you that have read my whole comment, thank you. I hope you’ll have a great weekend!

Hey, Tip… BTW-Always enjoy and learn from you! When using ziplocks, if your going to throw away anyway, rather than opening top, flipping over and trying to get the ‘goods’ out past the zip lock area, its easier to just use scissors to clip off a bottom corner and squeeze out from top to bottom… anyway, works better for me! I Do try to get several uses out of plastic, but when it doesn’t have another use, its gotta go!
An airfryer is great for something like baking the naan so it’s like freshly baked naan! You would’ve enjoyed one soooo much! The Cosori Dual Blaze is a fantastic one with two heating elements (you don’t have to turn things or shake a basket. Since there is no inner basket either, it’s also bigger, you put the food directly into the drawer. Looove it! 🤗

I love finding a Becky video after a long day and getting inspiration for the weeks ahead. ❤ I’m sure wishing I had some freezer meals ready to go this week! I have doctors appointments almost every day this week and my doctors are an hours drive away. So by the time I get home, I’m too tired to cook a fresh meal. Still not doing take out, but easy (icky processed) things to through in the oven. I’ve set a goal and promised myself, that each time I prepare a casserole this month and from now on, I’m going to make two and put the second one in the freezer!
Another great thing to cook is a pork loin in the instapot. I cut up an onion, put it on the bottom of the instapot and put the pork loin in. I cut it up some. Then you pour apple sauce over it and add the cinnamon, a little ginger, cloves. We make gravy and use some of the pork for tacos with mango salsa. So yummy.

I absolutely love your house. I never thought I would like gray (I am not fond of gray) on the walls. However, I really love your living room walls since you have painted. I love hearing Baby Acre! Thank you for your inspiration. ❤
I love the gray. This is what we used on the ship lap in our bathroom remodel. We cut our own using 4x8 luan boards. The gray is a neutral color great new choice instead of beige or white. I new she wasn’t going to like all that beige. I’m almost 70 so I don’t have Becky energy, but who does!😊
Thank you for sharing your pantry challenge tricks and tips with us and particularly for allowing the view from your kitchen window near the end. To see the crewperson, arm-lifting and lowering shows steady progress, in alignment with your overall attitude. So encouraging to watch your videos. I love the paint colors, simple yet sophisticated. Best wishes, always!
I love getting stuff used up. It is making me feel so much less stressed that the pantry and freezers aren’t overflowing. Also I’m using up the fruit that I canned and really enjoying the variety. Hoping for another successful garden season. I’m new to cooking for two people so I’m planning what I need to plant for two people.
I had the same surprise eggs from one of my Easter Eggers last week, after no eggs in forever! I checked the nest box for grins and there were 4 beautiful blue eggs! And for sure the store bought eggs are way smaller than they used to be!
Great job Becky! If you run out of coffee creamer, grab a can of condensed milk, put it in a quart mason jar, fill the rest of it with milk (if you have it) and you now have a delicious coffee creamer!
Mrs. Becky, I mostly use my freeze dried potatoes for thickening soups/stews/chowders and gravies. However, when I freeze dry them I do prepare them exactly as we make them, for the ones we will use within a year or two. But, for long term storage I still season but omit all fats, to help keep them longer. I use them also to make "Instant Potato Soup" by putting whatever I put in my potato soup into the storage container in the dried form. When I need it in a pinch, I just add boiling water or broth or hot milk and butter, stir in and allow to sit for just a minute. I often use them for homemade potato cakes. And, don't forget potato candy, potato bread, also...NOT like you need one more thing to do, but gnocchi
I have the Becky bug too!😁 I've reorganized 4 freezers, prepped mahi mahi fish, made three freezer meal lasagna, cleaned, organized and prepared my seed and planting schedule, prepped meatballs and sauce and am now getting ready to make roast chicken dinners for the hubs to take on the road for work. Becky is my angel! She gives me direction, energy, hope, even if something doesn't work out. I've spent a very long time incredibly sick and wondering if I'd ever be able to pull out of this spiral. She has helped me so, so much!💕😇
You amaze me!! You do all of the things. Your meals look scrumptious! Glad you and Josh took time for yourselves! You both work incredibly hard and deserve a great night out!!🤗
I have to say I am doing very well in the pantry challenge this year. I just did before and after tour of my freezers on my channel yesterday. Amazing how well we can go when we focus on using stuff up!
A Triple Squealer! I made a bacon wrapped pork loin a few months ago, and when I told my husband what was for dinner, he laughed and said, "You made a double squealer." It is now one of my favorite meals to make because the name makes me giggle. I am so glad you shared the stuffed, wrapped pork loin a Triple Squealer if you will. This is now on the menu for next week.
I make curry green beans with my Chicken Tikka Masala as a side. I lightly quick stream green beans in microwave for just a few minutes. In the meantime I sauté cumin seeds in butter & oil. Add onions and sauté until golden brown. Add sliced mushrooms and cook for few minutes. Add curry powder to taste and extra 1-2 Tbsp butter. Stir to combine then add lightly steamed green beans. Stir and cook for several minutes. You can also add a small can of drained chick peas if you like.
Awwhh you looked exhausted making the curry bless you, but it will all look amazing once the decorating is finished! Loved that Josh held the door open for you also! Love watching your vids shout out from Wirral U.K
Hi Becky ;) I noticed in the freezer organising video that you said you had a lot of riced cauliflower that needed using up. I just wanted to come with an idea that I use often because I’m not to happy with the cauliflower as “rice” Use the cauliflower rice as you would the shredded summer squash it adds some veggies to a dinner - when I do that with my curry, meat sauce etc it always turns out wonderful 🥰
Twice a year, I use do an “eat what you own” month. I might still get something at the grocery store but was mindful about it when I did - like no random things added. The pantry challenge is a great reminder that I need to do it again soon
Becky, once your potatoes are done why not try to put them in a blender and turn to a powder? You inspired me to make the oatmeal bake for my husband! I used peaches and cinnamon and vanilla! You're the best, Becky!!
I love that you are blessed to spend time with your Dad. These are the times you will remember in the years to come. I lost my Dad 20 yrs ago yet I am also blessed to have such great memories of our time spent together.
Becky, your cast iron skillet is amazing and seasoned beautifully!! Keep it oiled well, and it'll always be your favorite skillet. (assuming it already is because mine are to me. )
The tray limit on a medium is 2.5lb food per tray. I go over a bit here and there but that's a guideline to know how much to fill. If you do too much ice may build up on the drum so thick that you'll actually have to defrost if mid run because it struggles to pull enough moisture.
I do it the old fashion way but while doing the pasta I steam broccoli in the same pot. Brown ground sirloin with red pepper flakes then combine everything with my cheese sauce and bake. Its very good
I started the pantry challenge after seeing your videos, definitely not perfect but it’s so fun to try to use what we have at home! Would love love LOVE a pork loin recipe video
Wow. We always made macaroni cheese with white sauce with some cheese in. Not just cheese and butter. We then topped with breadcrumbs, sliced tomatoes and a bit of grated cheese. A sprinkle of dried parmesan boosts flavour without having to use much. Price of cheese right now in Germany, those big blocks you have... That's WEALTH! Milk and cheese prices have basically doubled in the last 18 months. So my frugal recipes from my Scottish youth come in handy!
I had a pretty good recipe for biscuits, but they were never as flakey or fluffy as I would hope for. So, I decided to try ur recipe this weekend for biscuits and gravy and oh my goodness, these were just perfection! I absolutely love every single one of ur videos and can’t tell u how much I appreciate everything u r showing and teaching! You have been helping guide me out of chaos and into a more organized and happy life. It’s by watching u and how u not only create things, but manage ur life and home that I am finally learning how to manage mine! Thk u so much for always sharing with us ❤
At the start of each new year, I try to "eat myself out of house and home". I purchase in bulk, and stock up during sales. By the end of the year my pantry and freezer are bursting at the seams. My goal is to get the freezer empty so I can defrost it. My self-imposed rule is to only buy things that I need in order to use the things I have. I applaud you for not going to the grocery store during your pantry challenge, that's very impressive. I've already spent $53.78 on food this year.
I always hated getting thick liquids out of ziploc bags. I found if I can’t reuse the bag, I cut a corner off and squeeze it out like a make shift piping bag. Then I don’t have to contend with the zipper opening
dinner looks great and that's why you put them up do give yourself a break, your a busy mom, wife and new home organizer. Good luck with the garden shaping up.
We now have 4 of your recipes in our regular family meal/pantry rotation and the stuffed peppers are one of them. I am not a pepper fan, but these were amazing when I made them. We also enjoy the "smash" chicken, flaky butter biscuits, and the diy season salt mix.
Becky, the best piece of advice when my (now 32 year old) son was born was that we should make a weekly date night a priority. We did, and we were always grateful, because when we slipped for a few weeks, little things got to us more. Can’t recommend it enough.
If you don’t like the reconstituted mashed potatoes then you can always add them to soups. Chowders potato leek and loaded potato soups for example. Or use it as a thickener.
Mix cocoa powder with dry milk a pinch of salt and some sugar use in coffee for mocha, as a substitute for your half and half, or make instant hot chocolate. If you have plain powdered creamer add a bit of that when making hot chocolate. Makes it creamier. My mom used to mix up a gallon batch of this as needed for the winter. 7 kids so we went through it pretty quickly.
She also made instant Russian tea. Instant tea unsweetened, tang, cinnamon, clove, nutmeg. I use pumpkin pie spice. Mix everything up. For a cup 2 to 4 T with hot water depending upon your taste.
The eggs are AWESOME!!! You are AMAZING!!! Most people I'm sure probably have to pick up milk during the challenge. God Bless and Love And Hugs From Western Upstate New York
I'm going to start looking into freezer meals because it's so easy and ready to go. I have an ankle sprain and fractured I'm struggling... My mother in law has been a huge blessing cooking for us and my husband as well coming from work and take care our 3 kids
I hope you feel better soon! What I have always done is try to make the “one for now, one for later” method. So, 2 lasagnas, 2 meat loaves ….. you get the idea. It’s a great way to start the freezer meal way of cooking.

People do not realize how much work, organization skills, and time it takes to be a Domestic Engineer!
Becky, you have changed my life in two major ways! Baked oatmeal and no knead bread! Both are now staples in my family's life!
I never knew how exciting it would be to make my own bread!! LOVE the no need bread recipe! Glad I watched todays video as mine dries out so I will try the damp cloth trick. For a yummy snack…toast the bread and spread Boursin cheese over it…delish!!!
@@cajbaf I just heat and eat. I suppose if it turned out not sweet enough you could add something
We always warm our baked oatmeal, then add a little sugar and milk
Where can I find the recipe for the baked oatmeal?
@Donna Fisher sometimes I drizzle maple syrup on it if it's not to sweet itself. During the holidays I did a gingerbread flavor and pumpkin spice. I'd just google baked oatmeal flavors! The options are endless!
Becky, i loved seeing you throw together a meal in literal minutes when you were explaining how tired you were after painting all day. It’s inspiring and so relatable! Also I’m so happy the chickens are laying again!🥰
Awesome ideas. I'm on pantry challenge to. It all comes down to not being lazy , willing to eat up what you have , cooking from scratch. It's so tuff but I' have learned so much! And I have saved so much!!!!
14:33 "We have no food in the house". Made my day.
I know! She’s a hoot!
I loved the fridge overview! As satisfactory as any haul!
Thank you for the video today, Becky! I'm really enjoying the week-long walkthroughs of the pantry challenge in one video. Seeing your approach and flexibility through different events and challenges is a delight and quite inspiring!
Looove it! 🤗
The chickens look like they are living their best lives with the yard work being done. I was watching them out of the window when you were cooking.
Date nights are important ! Good job having the party without going to the store!!!
Hi, DID YOU REALIZE that you dipped your oatmeal raw egg spoon into the spiced blueberry jar? I really enjoy watching your videos. I've learned alot of great knowledge from you. You have many blessings 💞🌻🦋
I love finding a Becky video after a long day and getting inspiration for the weeks ahead. ❤
I’m sure wishing I had some freezer meals ready to go this week!
So yummy.
Thank you Becky , you are doing so well with amount of top quality videos you are putting out plus baby plus decorating your home. Well done . Take care with lots blessings Maxine and family xxx
I am so proud of you. Awesome friend, mom, child of God, awesome cook, gardener and communicator.
I was really allowing the enemy to interrupt the peace I get from watching your grow this morning while reading horrible things people can say. You are so strong and I commend you for not feeding into the negative. .wisdom beyond your years. It's an honor and a privilege to be able to send my students to your channel, website and other social media up learn. Any children I teach I turn off comments or hide them so they do not have to see the ugly
Blessings to you, Josh and your son
Best comment here. 👊🏼❤️
My goodness new baby, new house, painting, preparing food for a party, I'm exhausted just watching you. I bet your husband appreciates the Superwoman you are.
Pretty much everyone with kids.
Thank you for sharing Becky!!! Everything looked amazing-and glad the chickens are laying again-that is the big money things there!!!😊
instant mashed potatoes work well as a thicker for soups, so if you don't like how the reconstitute, you can still use them sparsely for thickener.
When I went to predominately cloth kitchen towels, I began to establish a toss corner and/ or bucket for the towels destined for the laundry room..
Yes, another Becky day! I so look forward to these days. Sending hugs to all of your family!
The setting at the restaurant was absolutely beautiful. I bet you get a lot of inspiration when you go out to eat and find food you love.
I am real excited about your garden, I know it will be awesome this year
I had the same surprise eggs from one of my Easter Eggers last week, after no eggs in forever!
My eggs just started laying again too! It's so great to see all the pretty colors again - not to mention not having to buy store-bought eggs!!
I have the Becky bug too!😁
I've reorganized 4 freezers, prepped mahi mahi fish, made three freezer meal lasagna, cleaned, organized and prepared my seed and planting schedule, prepped meatballs and sauce and am now getting ready to make roast chicken dinners for the hubs to take on the road for work.
@Carries: I'm gonna go
check out your channel.
As usual everything looked absolutely delicious! I’m looking forward to seeing the dinner party prep video. That pork loin looked so good! 🐖
You're doing great with the pantry challenge! I love the new paint color!
I just wanted to come with an idea that I use often because I’m not to happy with the cauliflower as “rice”
Use the cauliflower rice as you would the shredded summer squash it adds some veggies to a dinner - when I do that with my curry, meat sauce etc it always turns out wonderful 🥰
I love your GE Appliances!! I work for GE Appliances in Louisville, KY!
Love seeing how many meals you made with all your hard worked shelf stable/ freezer meals.
Do you not regularly clean the coup out?
Becky you should keep your jar of yeast in the refrigerator to keep it fresh, room temperature tends to reduce its activity.
Sounds delicious!
Thk u so much for always sharing with us ❤
Hi Becky! I hope you have a lovely weekend with your family! Also, happy Valentine's day soon to you sweet new momma!💘💌
I would really, really love to see a LOT more of the yard/garden work. I'd be happy to watch that for hours.
Just a tip. After you zest a piece of fruit, wrap it in Saran Wrap before putting it back in the fridge. This keeps the fruit from drying out.
I just love that your chickens just run free in the backyard, too cute.
My husband and I have been to that restaurant in Vancouver, also courtesy of a gift card! Delicious meal & I loved the rustic edge tables.
i have to get in my freezer and start using up stuff. Pulled out banana bread that went in a few weeks ago. It's GREAT!
Your homemade Mac and cheese dinner looks really yummy. The pineapple sausage looks like a yummy option to traditional sausage.
Becky, the best piece of advice when my (now 32 year old) son was born was that we should make a weekly date night a priority. We did, and we were always grateful, because when we slipped for a few weeks, little things got to us more. Can’t recommend it enough.
Yum 😋 I would love the recipe for the 5 spice blueberries!?
Great ideas thank you
If you don’t like the reconstituted mashed potatoes then you can always add them to soups. Chowders potato leek and loaded potato soups for example. Or use it as a thickener.
„Thank you for being here, thank you for being you!“❤❤❤ Becky, you are so cute! I wouldn’t be mad if that was the end for every video!
I love these pantry clean out videos!!!!
If you like those type videos check out fit frugal mom. Her name is Christine and she does smilies videos on her channel
You’ve inspired me to make some oatmeal bars! I’m hoping I can rewatch and copy your recipe 💕
Great idea
The eggs are AWESOME!!! You are AMAZING!!! Most people I'm sure probably have to pick up milk during the challenge. God Bless and Love And Hugs From Western Upstate New York
It is so fun watching you come up with all these recipes and meal ideas.
@@kristenevans4557 Thank you so much for your advice 🙏🙏🙏 I'm going to start doing this when I get better
I am inspired to do some pantry chalenge. My family is amazed. Bought a little bit of meat for a birthday dinner but other than that I want my freezer cleaned out this spring. Thanks for your inspiration!
