Every year we travel to Florida to catch these delicious fishes. We take them home and my wife cookes them in curry or the Indo style with coconut milk. Cook them with the skin, more flavor!!! We call them kwie kwie in our country. Last year we catched them, they travelled from Middelton fishcamp to Miami, Philly, Amsterdam (transit in my freeser for 2 weeks) and then to South America.

That is a very tasty fish especially with the right seasoning. I first tried it in Trinidad 30 years ago but was messy to eat trying to take of all the armor to get to the flesy , but i like the way you extracted the flesh out before cooking and when next I am back in Trinidad, when I order to go, will insist they take out the flesh before cooking so my job will be just to enjoy the fish and the seasonings over some rice and good salad. Good job !

The reason the armor is not removed by the West Indies culture is because when cooking, it will retain the ingredients better and won't have much of a game flavor as these fishes are mud dwellers. The most crucial part in the flavor of this fish is the prepping of it.

Yes, Cascadura in Trinidad, Armoured Hassar in Guyana, Busco in Venezuela. Wonderful cooked in curry with Green Pigeon Peas. Just remove guts and gills. Cook whole. The armour comes off easily when cooked.
Never seen them cooked with the scales off first. Usually we cook them head and scales still on then when they're ready to eat you can slide all the scales off in one go.
You’ll get use to it eventually. We curry it after cleaning the fins n all! I don’t put coconut milk but, a lot of people do. Not as much as you did lol then again u made a difference dish, like an Alfredo as u said. To the curry, some of us add fresh tomatoes, drumsticks (MORINGA) whole Okro ..... Of course we eat it on top of rice or Roti. That’s kinda like a Nan, an Indian Roti or bread if u want to call it that. It was nice to see something different lol 👍🏽👍🏽

A. catfish is best cooked as a soup or stew. Bouillabaisse French Fish Soup is a good recipe for this fish. Wash it with lemon. You can also use a cioppino recipe too or a Brazilian soup recipe. This fish is a delicacy in South America.

I am Suriname Indian - South America. There is a very unique way to catch this fish which we call kwiekwie. Just clean and leave the head on. Made in masala(curry) is a taste of another world. We suck the gravy out of the head mmmm, hungry!
Yo that's really cool how you clean it out but you should look up on Trinidad and Tobago Caribbean cooking fish and you would see the call that a different name down here is not armor catfish
Check out some vids of how the West Indian culture clean and cook the guanas. Everything is curried in our culture. You have what's called bunjal (curry is cooked down to where there is no sauce/gravy, similar to the texture of Jamaican Jerk dishes) or cooked where there is some curry sauce/gravy is present.
I'm from West Palm Beach and we usually go out to Belle Glades, Everglades and around Lake O to catch these. Just wondering where you caught these in Florida. I don't recognize the lake. You catch and we cook Guyanese style! ;)
I believe that pot should be replaced. Obviously youre free to do whatever you want, but those coatings are toxic when they start peeling. Great video topic though, hadnt seen this before.
This fish is delicious both as curry with coconut milk or casreep (which is made with yucca juices boil to a black sauce) . This fish we call hassa I would love to cook either dish for u with head on n without taking out d armor off of it.

@@Shouldawornshoes I've had some good results in Florida using a grow box inside a screened-in-porch, right along the edge. They got enough sunshine, but not too hot. And no worry of bugs or critters..
Cascadoo in Trinidad and Tobago. It is usually stuffed with seasoning and pigeon peas and cooked in curry with coconut milk.. So delicious. We also do not remove the armor just wash it clean.
There have been other factors too. There just isn’t any flow of water there and it’s in the middle of a cow pasture which caused nitrate/oxygen issues.
Dude you threw away half of the fish 🤷🏻♀️...you only have to gut the fish and stuff the cavity with seasoning and tamarind or tomato and then curry them with pigeon peas....you need a Trinidadian to cook them for you 😁

Ran across your channel. If I can give you some advice young man, I would get yourself some good cookware for your your kids sake and yours. Cooking in a Teflon Pot with the bottom clearly scratched away to the bear metal is extremely toxic for you. You cant taste it, you cant smell it unless it burns but it is there. If I could afford to I would send you a brand new set but I am 80 years old and on a fixed income. Other than that I loved your video and your cooking. Good job.

Ran across your channel. If I can give you some advice young man, I would get yourself some good cookware for your your kids sake and yours. Cooking in a Teflon Pot with the bottom clearly scratched away to the bear metal is extremely toxic for you. You cant taste it, you cant smell it unless it burns but it is there. If I could afford to I would send you a brand new set but I am 80 years old and on a fixed income. Other than that I loved your video and your cooking. Good job.

It was in the Tampa area in a private pond. There are everywhere through. Any kind of pond that is fairly old should have them.
