    Pie Crust:
    3 cups all-purpose Flour
    1 cup salted butter
    1 egg
    1 tbsp vinegar
    Ice water
    Spinach Ricotta Pie:
    3 ten-ounce boxes frozen spinach
    1 1/2 cups grated Parmesan Reggiano
    3 cups whole milk ricotta
    5 eggs
    1/2 cup unsalted butter
    1 medium onion

    My mom always used to roll out pie crusts and homemade egg noodles on a floursack towel. I've never seen anyone else do it :D

    I think I'm going to try this! I mafe your artisan bread last year, and i truly felt like you were in my kitchen with me, walking through each step. This gives me the confidence to one day soon try making sourdough bread! You are a great teacher!

    This looks delicious and I will be making it, thank you! Mary so glad to see you using the butter in the pie crust and showing us about brand of lard to use. I recently bought a new can of our beloved Crisco only to read on the label "BIO-engineered". Why?? Who knows!! So I will not be using it anymore. With all that is going on now I read labels like never before and I am so glad that I read that one! Love and God Bless!

    That looks and sounds absolutely wonderful! The crust recipe is almost identical to the one I use for fruit pies. It is wonderful, and the recipe I use I found in an Amish cookbook. It makes 5 9" pie crusts. I think it was cut down for us "English" folk. But I love it, because I portion it out into disks, wrap them individually, and put them all in a gallon size freezer bag. Then I can get out whatever I need. And that reminds me, I need to make a batch before Thanksgiving!

    This is delicious!! Finally made it last night for dinner... added ground lamb, used my homemade ricotta and even though I messed up the pie crust by adding in the amount of butter for the filling... (ugh but I caught it in time to fix) it was absolutely amazing! This is a keeper and not just for holidays. Any old random Wednesday will do 😍

    Mary when I first learn to cook my grandmother and great aunt Anna taught me that when using a glass container that went into the oven the temperature should be reduced 25°. Is that still true? With this dish using glass is the 375° for either glass or metal. Many thanks.

      Actually 370F for glass. I dropped it down from many recipes that say 400F which is way too hot and causes the crust to burn. I found 370F worked great.❤️🤗❤️

    Can you make a video on how to tune your mockmill machine( I have the 200 one) I bought mine last year and got discouraged cause it kept getting stuck and didn’t figure how to get it to mill fine flower. I lost motivation but now starting over. Complete newbie here and love sourdough bread so I want to start making it

    Hi Mary this has nothing to do with what you cooking today but I would love to know what you turn you “Christmas simmer pot .” (Of orange aniseed apple rosemary cranberries )
    What do you turn that into . ???
    Could you turn it into candied fruit?
    Put alcohol with it and sprits the house or splash on your body
    Or
    Can you drink it like a tea.
    I would love to know what you suggest as not to waste all those good ingredients ??????
