I have recently been building small sofa side tables- and one of the most popular seems to be the poplar tops with sapwood and dark streaks. It’s quite beautiful!
It has been a gradual process but I can truthfully say that I seem to have reached the point where Poplar is the first wood I choose - never thought poplar would end being my favourite wood, but there you are. Only real downside is that it tends tomake me want to colour the wood where I never did that before.
He should flip that bench top over and fill it with epoxy and star wars vehicles

I cannot picture what you mean on the half lap or haunched method of doing the shelves. Please show some pictures.
