Hello Helen, sounds really nice. But I usualy do it a bit different, I boil the legs first until they are done, and then put them in the oven, to get a nice crusty skin. An I serve the duck on a different plate. Because it you put the leg in the soup, the skin is not crusty any more. Otherwise thank you so much for your videos, I also bought your great book! Martin

It used to be a weekly treat. Definitely need to try making it a tf home. I love this more than Pho and can safely say I have converted a few friends and family onto it over the years. So thrilled to have found a recipe for it Helen. You are a star. Thanks for sharing this.

Wow, fantastic and thank you. I live in Copenhagan and it´s not so easy to get duck legs/thighs without having to buy a whole bird, so i used a good quality (and large!) duck breast. Even though l couldn´t get papaya (costs more than 4 Euros here anyway! :-)) your recipe was so versatile that l could find substitutes and mix things to suit. Thanks again Helen and l´ll definately follow you :-)

I perfer Salad Pickles (raw sweet mango, big onion slices, japanese cucumber, jelly fish) Thai sweet & sour chilli sauce, use calamansi juice and cut parsley more delicious. I would prepare duck and salad at night and marinate overnight better. Ideal meals times Breakfast, Lunch, Dinner or Supper
This looks similar to the duck noodle soup I used to eat in Thailand called Bamee Nam Pet บะหมี่น้ำเป็ด. I remember the broth had a deep rich taste with real depth of flavour and along with the pak choi and egg noodles was really delicious. Always wanted a recipe for this so I could make it myself. this looks really awesome and i definetly gonna try this recipe! But i have 1 question.... How do you eat non pre cut duck in a soup? I really have no idea how to eat the meat in this dish

Is it possible you didn't do any duck recipes before, because it is more expensive in Germany and duck legs aren't as readily available as chicken legs?
