    The key ingredient for preparing pickle is edibe oil.
    The quality of the pickle depends on the quality of the oil.
    Sesame oil is considered as a number one oil for preparing pickles.
    Idhayam sesame oil is unrefined, filtered oil so it contributes a unique taste and flavour to the pickles.
    Sesame oil contains sesamol and sesamin which acts as a natural preservative. It prevents the pickle from becoming rancid with unpleasant smell and taste as a result of decomposition of vegetables. This oil is mostly used as it is a stable vegetable oil with long shelf life...

    I love this achar and it's my absolutely fav when i tried for the first time in Andra Pradesh, but i couldn't find the same one here in Gujarat. So I made one by myself, and it's as delicious as the packet brought for the market in AP. Thnks, it helped me a lot. ❤️

      One quick tip if you want to keep the pickle fresh do refrigerate it. This will
      maintain the colour and taste longer.

      App tel ko high flame par garam kar le. Phir thanda karke add kijiye.
      Agar possible hai toh pickle ko fridge mei rakhiye. Aisa karne se pickle ek dum fresh rehta hai. Mere pass last year ka thoda hai. Naya achaar next month se use karenge.

      Neeru ji Andhra style pickle til ke tel se hi banta hai. App mustard oil use kar sakte ho. Par garam kar le pehle oil phir thanda hone par add kare.

    Ye achar til k tel me banta hai ya aap sare achar k bare me ye baat bol rahe ho?
    Humare yahan toh sirf sarso k tel me achar bnta hai

      Andhra mei mostly til ke tel mei banta hai yeh wala achaar...
      Waise hum bhi Aur tarike ke achaar banate hai peanut oil Aur sarso mei...sare alag alag hai...
      Oils alag alag hai Aur unke properties bhi..use karne ke tarike Aur taste bhi...
      Yeh achaar ek baar til ke tel mei try kijiye.
      Aur zyada din fresh rakhna hai toh fridge mei rakhiye...

    How can fresh Garlic cloves & mango pieces be totally without Moisture? They can be Dry externally but will have plenty moisture inside.

      They do have moisture but Sesame oil acts as preservative and the sourness from mango makes it stay for a year min. Remove little quantity in a small jar so you do not disturb the whole pickle. And for better freshness I prefer to refrigerate it. This step I started from past few years because it keeps the mango pieces also fresh. Do try. We make it every year.
      One more tip is if you are using any other oil than Sesame heat it till smoking point and cool it to room temperature then add it to the pickle.

      Green chillies are not added in this kind of yearly pickles.
      Pickles made with green chillies have less shelf life.

      Agar app ko garlic ki smell nahi pasand toh skip kar sakte ho..
      Agar apko acchar zyada time tak fresh rakhna hai toh fridge mei bhi store kar sakte ho..mango aur garlic ki crunch waisi hi rahegi..

      Achaar ke ingredients rai, methi, sab strong aur kadwe hi hote hai..
      Kuch din baad jab saare ingredients ek dusre mei mil jate hai tab Achaar ka sahi taste aata hai. Achaar ke bohot barik tips hote hai. Sare detail mei batane ki kosish ki hai. Aur Yeh Achaar hum 25 saal se aise hi banate hai.
      Kuch din time dijiye.
      Phir bhi koi problem ho toh yaha share kijiye. We will solve it.

      Ingredients kafi kamm hote hai. Par precision se karna zaroori hai sare pickles making aur baking.
      Kabhi mistake ho jaye toh galti kaha hui dekhna chahiye. Tabhi hum perfect hote hai.

      Nahi hota. Sare instructions clearly likhe hai video mei. App til ka tel use kare woh natural preservative hai.
      Description box ck kijiye zyada detail mei likha hai.
      Humne hamare MIL se sikha hai.
      Ek aur tip batati hu. Generally kairi soft ho jati hai. App fridge mei store kijiye toh kairi bhi fresh hi rahegi aur every 15 days thoda thoda nikal kar use kar sakte ho.
