I think it may have been more of an added video than a removed video. Sometimes things get added to ports in an attempt to make them more interesting. I wouldn't exactly call this stuff BAD animation either, since at the time it was probably expensive to do anything we expect to see today.
WeskerSega is correct. FMV like this opening is just what was encoded onto the disc by the programmers and not the actual Saturn's graphic engine. If this were included on the PSX version, it would have looked exactly the same albeit the video quality would have been a bit better. If you are talking actual in game graphics, then yes the PSX tended to do 3D better than the Saturn because it was a lot easier to program for. Saturn, when properly coded for, could do pretty good looking 3D.

Don't be foolish, what a bunch of nonsenses. CGIs/FMVs have nothing to do with 3D real time graphics and hardware limits. Their quality, technical compression and resolution aspects aside, rely solely on how they were created and designed in the computer-generated imagery software. And by the way, if you want 3D real time graphics on the Sega Saturn in the way the PlayStation ever reached or even better, then take a look on the unreleased Sega Saturn version of Shenmue.

The original opening (the one with the song) is also included in the Sega Saturn version. It shows if you do nothing on the title screen.
