And he knows the kids have to become like him too, if they want to have a better chance of survival. It is not the best thing for the kids, indeed. Vesemir fully knows this, all too well. But it is the only way he was taught so much. It is the only way he knows to teach.
I stopped watching at the episode he became a Tree monster thingy. I had no clue what I was watching. Never read the books (though I intend to) and only ever played 3 but even with only playing 3 I knew they just completely butchered it

Anime have a giant variety of art styles hence me specifying "this animation STYLE" as in meaning the art style of the show, the visuals. Sailor Moon is also anime but looks entirely different from this. Madoka Magica is also anime and has a different art style than the Witcher movie or Sailor Moon just like Beastars has a unique style for its visuals as well for examples. All anime but each one looks entirely different from one another. Shows like the blood of Zeus series, The Castlevania show or this Witcher movie are anime by the definition that an anime is simply just an animated show produced in Japan and use the same animation techniques that the anime industry uses but they utilize a style more similar to western comic books or animation movies when it comes to how the animation looks. In the full movie you see that this is the same way Declan trained Vesemir. And it had terrible consequences down the line for all of them, so Vesemir chooses to break the cycle with the remaining kids.

In fact, he lost his hair after mutations (It is pretty clear that at the end of the story the boys had already been through all the trial of grasses, because there are only a few left and we know that most of the children didn't survive) and also, you can say he is Geralt because of the freackles on the nose.

Now, I've never watched this show, and my memory of each character's age is a bit hazy, but here's what I've managed to gather in terms of how Vesemir looks here: Vesemir is 400-something in the Witcher books and games, and yet has the appearance of a regular old man (probably looks around 60-70 I'd wager), due to Witchers' slow ageing which I'm sure you know about. Geralt, who is nearly a century year old, looks in his 30s perhaps his 20s despite his age. During this anime, I'd guess that Vesemir is around 300 years old, given that Geralt us still young here. Given these facts, and how these two as Witchers look despite their respective ages, it could be assumed that Vesemir would have looked around 40-50 around this time (so the age of 300 or so). So, his appearance here could easily be passable. This is especially due to the fact that it's animated and doesn't need to be entirely thorough and accurate in physically representing a character's exact age. So, long and short of it is - I think how Vesemir looks here could be deceiving as he doesn't look as old as he does in other interpretations (i.e the games), but it should also be taken into account that this is probably several decades, just short of a century, before the events of the first games (probably the Blood of Elves book too). There's also the fact that the show is an anime and takes creative liberties in their character's physical appearance. Again, I've never watched the show, just read the books and played the games.

I would much rather have this studio do a Witcher show. The Witcher series we deserve. One based on the books. Like those books and short stories are a gold mine. They’ve yet to be adapted at all. By the time Geralt comes to Kaer Morhen Vesemir is already hundreds of years old. So if he still looks this young while Geralt is training what makes him age like milk within the next 80 years?
