- welcome back to cookie science! today we are comparing using no eggs and double eggs! eggs are very important in cookies and make a huge difference.
as always, for this series i am using nestle tollhouse as the base recipe! - Хобби

For no egg cookies people usually add what is called the "vegetarian egg" which is ground flax seed or chia seed
But most of the recipes I've seen on yt use a bit of milk to add that moisture to the eggs
Edit: for those of u telling me that vegetarians eat eggs , please search up whether all countries consider eggs as a vegetarian food
I grew up in India and here we consider eggs as meat

The no-egg cookies is the kind we had in Europe before internet recipes taught us how to make American cookies. Dry and very bisquit-y. Whenever someone in class whose mom/family were from the US and they brought American soft cookies for their birthday, we were wild with excitement. We would all do the wildest things for the birthday kid just for a 2nd cookie hahahaha

@@jaredjosephsongheng372 cookies and biscuits are different. Cookies are meant to be soft and chewy, biscuits are hard and crumbly all the way through, most similar to the no egg cookie she made, and yeah biscuits don't have eggs
Cookies without eggs is exactly how they're made in Europe. I remember being astonished when i first encountered an American cookie recipe and there was eggs in it.

You might be thinking of shortbread biscuits. Actually, come to think of it, most biscuit recipes I know of don’t have eggs in them (I’m Australian but our food is pretty similar to the UK)
I live in an european country and I've never seen a cookie recipe with no egg.
The double eggs are what my grandma's cookies looked like! I never got the "grandma's cookies are the best" thing, my dad spent 4 years perfecting his cookie recipe and they're really amazing
I think Amish butter perfects a perfect cookie recipe. It has a high fat content and rich flavor which just makes the cookies 👩🍳😘.

I would just like to add that no-egg-cookie-dough is great. Make it with heat treated flour, and you can skip the baking part altogether, which is great for people like me who want to eat it asap.
One of my fave cookie recipe has one add egg yolk without its white, and the result is very nice and chewy. Could you do an experiment with whites and yolks proportions?

What about egg white (only) / egg yolk only / some kind of mix of the two, e.g. 2 egg whites and 1 yolk. I've often seen different combinations of eggs in cookie recipes & always wondered how it would change the taste!
I’ve seen 1 whole egg and 1 extra egg yoke that’s supposed to add more protein

I'd love to see the difference between using yoke and egg white. Like, cookies with only yoke and cookies with only white, but the same amount of liquid.
The no-egg version looks like shortbread which is crumbly and crunchy on the bottom.

I’m just saying in experience of having cookies with no eggs because my cousin they sometimes if you do it right you get really big cookies and you can just eat the batter. 😊 And they are super good and chewy.❤

Fun fact: my grandma adds double eggs to brownies, and they taste way to good
I think the baker’s behavior can also affect how adding additional eggs makes the cookies turn out. Because sometimes I need an extra one lol.
