Tofu Recipe from Tofu Box
(Makes 1 large-sized block of tofu)
2 1/2 cups dried soybeans, soaked overnight (amzn.to/2HQEisK)
14 cups water
1 1/2 teaspoons nigari with 1/2 cup warm water (amzn.to/2L9VDyd)

OMGosh .!!! Thank You 🙏... i get it now .. tofu has had me sooo stummped for about 2 yrs... but girl. Its the EXACT SAME PROCESS for Nut cheese .!!)D. Minus the Soak... and with nut cheese you can just use lemon juice. Ive made MANY cheeses since givving up on Tofu for so ling ... awesome Vid. THANKS again 💝🤗👍💯😉

😳😳😳... i havent thought about making a Smiked Cheese .!! Lol. Next on the list ..!! But wait now to see your verion for sure .!! You have such great twists in everything. I def enjoy getting out of my cofort zone and trying new foods ... i wish they would straight up give you the ing and i could fine tune out measuements.. and ill BET usung Brazian Nut is BOMB .!!)P also heard Macadamia Nuts are great also for cheese because of high lrotine and Fats ... def have a couple projects to do now... great show and keep em comming 👍👍
I tried this after watching it on Mary's Test Kitchen but I used lemon juice and ACV. I preferred the lemon. It is a tedious process, but the flavor is way better than store-bought. I tried tempeh as well.
East Meets Kitchen I found the ACV pronounced but the lemon wasn't really noticeable. You can check out the tempeh video by Veganlovlie. Her process is pretty easy. I want to try it with chickpeas next.
LoverofmySoul - I failed epically with the soy milk portion of Mary's Test Kitchen, this process seems a bit simpler. I was wondering if you've tried this recipe, but just replaced the nigari with lemon juice?
I want to try making my own tofu. I know you used to live in the Boston area as I do now. I can sometimes find Heiwa Tofu in certain markets which is made in Rockport, Maine in small batches from soybeans grown locally. I can’t always find it so I’ve been curious how my own would stack up.
East Meets Kitchen that’s funny because I had thought about asking if the difference between extra firm, firm and silken tofu had to do with the amount of nigari used or how long it’s pressed. I’m excited to try this. (And yes there is a ton of snow and we lost power for three days. My niece is in London now and she says everyone talked about how cold it was there when it was in the 30s Fahrenheit! We know better, don’t we?)

How long is the shelf life of your fresh Tofu?
Okara ftw! There was a local Japanese restaurant that made the BEST Okara period! The parents wanted to retire so they shut down the restaurant at the end of February. So sad!
Their Okara had sugar, a hint of Mirin, fine slivered and sweetened (cooked) carrots, and Sesame Seed Oil. They made have added ground Sesame Seeds but I'm not sure on that. Their daughter didn't want to give up their family recipe.
Being in Hawaii, we can buy Tofu year round from three local vendors (on Oahu). Fortunately these are fresh made and have a short shelf life of about a week. Any leftover Tofu I'll store in a clean container covered in filtered water that is changed every two days.
With the "imports" from California in their aseptic packaging these Tofu have a longer shelf life. I still prefer the local though.

I forgot about adding Shoyu (Soy Sauce) to the Okara for color and taste.
