Beautiful. I haven't seen this chicken version with noodles in Vietnam, but it's very popular to have this chicken with fried rice. It's called "cơm gà xối mỡ"

His family is from southern part of Vietnam where people like to add some sugar in cooking. It is possible to skip the sugar except in the sweet and sour sauce

hi, can you tell me how you keep the master stock in a restaurant situation where you are using it everyday. do you refrigerate it between use, or just keep it on a low heat all the time. Thanks

I've searched for the recipe of this master stock for a long time. I think I found it. How do you keep and replenish the master stock? Do you cook a new pot and pour the content into the preserved master stock, like making sour dough bread?

Luke is well known for cooking with sugars in Vietnamese cuisine. Vietnamese dishes are not known for sugars Luke. Watch out for diabetes people.
