great stuff, but how does someone who clearly knows so much about food think that the flavour of fried meat is somehow 'sealed in'! It's the Maillard browning reactions that you want... Such an enduring misunderstanding... Great show though, off to watch the other episodes
I love Luke but what irked me about this video is when he touched the raw chicken and then picked the pepper with the same hand and ate it. Salmonella anyone?

His cooking style is Southern Vietnamese one. He adds sugar to every dish. Btw Vieynamese chickens are tyhe best in the world I think.
