INGREDIENTS
8 ounces (227g) pasta, of choice *preferably something small
1 cup (240ml) non-dairy milk
3/4 cup (84g) vegan cheddar shreds
2 ounces (56g) vegan cream cheese
1/2 tablespoon vegan butter
1/4 teaspoon salt
1/2 tablespoon nutritional yeast
2 cups (170g) broccoli florets, frozen or fresh
2 cups (480ml) water

My Aunt grew up on a ranch where they had to carry water inside. She remained very water frugal her whole life. I was amazed at her ability to perfectly cook large elbow macaroni so that no draining was required! It took me many attempts and I finally nailed it recently😀. Her family made a version for Lent, which thanks to YT, I’ve learned Southerners call “macaroni and tomatoes.”

Nice, I love to throw some paprika in there for an extra layer of flavor, and also helps really bring out that golden orange mac n cheese color!

I am NOT Italian, and these one pot pasta recipes make my skin crawl, LOL. But I trust your judgment, and confess to usually adding my steamed broccoli side dish to the macaroni leftovers to save on fridge space, so this one makes sense to me. Will give it a shot; thanks for posting : )
