    我以前看过一个新疆人在知乎上分享的羊肉串配方,羊肉用洋葱和蛋清腌制半天,其他什么都不要加。串好后烧烤,5分熟撒盐,7分熟撒辣椒面,9分熟撒孜然。非常好吃,还有买的时候可以买块羊尾油,肥瘦相间地串。

    I am so pleased that you are so into the Chinese culture. As a reference with enhancing to the next level of Chinese BBQ, It better to use lamb shoulder that is more tender and even fat instead of leg meats, buying spices from an Indian grocery shop instead of woollies, and replacing the coal with wooden charcoal.

    i think with the hearts you're supposed to butterfly them, so there's more surface area to soak up the seasoning, also that'll make it taste more normal-ish instead of being a rubber ball that bursts when you bite lol

      yup,but butterfly shape kinda tricky cause it's easy to cook them very dry so i wouldn't recommend unless your fire control is good

    Loved the video! Chicken hearts are very normal here in Brazil. I usually marinate it in salt, garlic, chopped parsley and green onions. We also use skewers over charcoal here, just like shaokao!

    Love the permanent undercover BBQ setup - you even have an exhaust fan. If you're going to be doing charcoal BBQ on a regular basis, I recommend getting a chimney starter, it makes lighting up the charcoal so much easier.

    I grew up with chewy corn, but I always go for sweet corn every chance I get.
    I don't like sticky rice either.
    But I am little surprised and so glad that you find chewy corn so enjoyable!

    This brings back memories of the 80’s when lamb was considered a poor mans meat and we had lamb skewers every weekend. We usually have chunks of veggies in between meats to give your stomach a break from meat overload 😁

    Well done! Household enjoyment. If the heart skewers are cut in smaller pieces or maybe in half I think it will be easier to season and eat.

    Smoked mixture of cayenne pepper, paprika, black pepper, white pepper, sea salt. You can smoke spices in a dry pan over low heat, give constant stir until all the aroma start to come out.

    We've really been enjoying your videos - your family videos are really wonderful too ... so much so that this video inspired us to try and make 新疆烤串 at home - and it was a surprising success! Tonight I'm going to try and make something from Sichuan (辣子鸡) - really hope it turns out mouth-numbing good! We can't wait until the COVID cases to reduce a bit so we can go out and try many of the places that you visited with your family in Sydney (the only local one we tried so far was the Pancake King - which is awesome!).

    About the corn at 7:55, i was told it is the same type of 🌽 corn. In the west, the corn is picked up when it is still an infancy stage. It is very juicy, but not starch has been developed and stored yet. Once the corn is left to grow it will become starchy and become a better source of carbs.

    a recommendation for you. I recently bought a fermentation pot to make the Sichuan style of sauer vegetable. it's quite practical and successful. maybe you can try it. and you can buy the seeds of chive from internet and plant them in your garden.

    The lamb skewers look very tastyyyyy. But for chicken hearts, you should have give them a couple of cuts on the surface. And they taste better when they are dryer

    In preparing the chicken heart, we usually cut it half the way and wash away the clogged blood left therein before cooking.

    When I do Chinese style bbq at home, I do not marinate the lamb/beef. 烤的时候会加盐,五香粉,孜然,辣椒,最后放一点点白糖.

    Looks great! I do Chinese bbq sometimes in Canada, and of course probably not totally traditional, but similar. Luckily there are many supermarkets that cater to many cultures. I also tend to have a lot of mostly veggie sides - pickled daikon, a beansprout salad with sesame oil, green beans with lots of garlic. Things that a refreshing after a lot of meat and good for the vegetarians in the group too. I also use Chinese 5 spice along with the cumin and chili. Try making a Korean style bbq with the classic Korean sauces. Kimchi on the bbq is delicious too! And soju of course. I am a firm believer in shared plates and family style eating - so much more interactive and social plus you can try a whole bunch of things. Western style eating has its place where everyone orders their own plate, but I always think that people eye what others ordered and people end up stealing bites to sample anyway. The King of the BBQ might disagree but I always use hardwood charcoal not the formed briquettes. I find that they have a more natural smokey flavour, but that is just me! Really enjoy your videos. What a lovely group of people (and dog).

    - I actually always get lamb shoulder coz it actually got more fat. And my favorate charcol is the orange bag from local BP shops in Melbourne, not sure if it's same for oz wide shops, - it's real wood and you can tell coz some are keeping the branch shapes. I think real wood charcols actually adds some flavor to it.

    I live in the US and all the lamb I buy is Australian lamb. Anyway, my question is actually about your grill. It looks like half hibachi and half grated. Is the hibachi just a portable part or it's built in? I'm about to donate my old weber to my work lounge and buy a new one and yours looks interesting. The hibachi can be used as a pan or a reflector to radiate heat as the indirect method. Anyway, if you don't mind telling me the brand and model of it so I can do some research on that one. Thanks.
