I watched with excitement this deer bacon from start to finish. I loved it. I must say Danny has a poker face because when he tastes something, you don't know if he likes it or not until he speaks. This looks delicious.
All the years we lived in MT we processed many deer and elk. All we saved for regular eating were the backstraps a few steaks and roasts. The rest we processed into sausage patties, slim jim sticks and bacon. Any roasts etc that were left in the freezer by next hunting season got "upprocessed" to patties etc. Patties, sticks and bacon were so popular they never lasted the full year. It's a must have. Great job guys!

We love deer, 6 in the freezer from this year. 4 young ones and 2 bucks ground up for jerky and deer sausage but now y'all have miss apryl wanting me to smoke some bacon... looks good

When you do the beef bacon, I’ve had both the ground and formed kind and the thinly sliced brisket kind. (Both were all beef) the brisket kind is much better when the seasoning is right.
Beautiful smoke ring on that bacon. That was sure a labor of love and from your reactions, definitely worth it. It would be even more work but maybe you should consider publishing a book (when you have the recipe just the way you like it) so that folks could have a hard copy of the instructions too make it. Thank you for going to all the work of filming all the parts of this very long process, it has been fascinating!
We were gifted some deer bacon this year (commercially processed) and was fantastic. Only downfall for us was it was made like a huge log of bologna and the packages were just too big for the both of us. Like you I had never heard of deer bacon. It is great! thanks for sharing.
Maybe it would be worth planting pawpaw seeds along the branches of the waterways for deer feed, if nothing else. Pawpaw thrive on neglect, and you never know what seeds will produce; you might get meh, and you might get magnificent.

I'd really be interested in learning how to make ground chicken or turkey bacon since I can't eat mammal meats anymore. I would need to use duck fat for the fat instead of pork, though. (BTW, we saw a flock of at least 50 turkeys in our back yard this morning. They were led by a big Tom, and 3 big Toms brought up the rear. Man, were they beautiful! )
I love bacon but I also love deer steak. I love deer, steak, mashed potatoes, pan gravy from the deer juice and a good vegetable like corn and some biscuits or yeast rolls. I have to have some deer steak because I love my deer steak. I would like to make a lot of bacon but I have to save some deer steak

There is a butcher shop here that makes beef bacon. He makes one with jalapeño pepper and a plain one. My favorite is the pepper one.

If I understand aright, pastrami is smoked corned beef, and when you corn your own beef, you don’t need nitrates or nitrites.
