    Came from Ironmouse "Gordon Ramsay Disappoints Ironmouse" review of Gordon's pegao. Ironmouse freaked out at Gordon because his pegao did not stick at all. Gordon even went further and added eggs and cilantro on top of it! Ironmouse said it was a crime scene. Now I feel better knowing real pegao from you. Thank you,

      Specially when no one else can do something to complicate it. I’m think is going to take me my whole life learning to burn rice like that. Not even the top chefs, can beat that lady.

      @@1165TheLeon You're right, that's legitimately how we recognize a good cook: by how they execute the simplest dish (typically scrambled eggs or steak)

      In Surinam we take what you call pegao and leave it out in the sun till its dry, then we add salt and eat it like crackers.
      Slightly burnt rice works best for his.

    Carmen I HAD TO get back on here and tell you why this special video of your knowledge means so much to me. As a child I was always around my Puerto Rican Abuela cooking up a storm of delicious foods in her kitchen. I never thought it important to take notice,pay close attention and especially not write/take notes. After parents divorce I was completely separated from Abuela,
    my Puerto Rican culture and roots 😥.

    In Brazil we call this "crostinha de arroz" which means rice crust, and she did it beautifully, like how she didn't washed the rice, because the starch helps to form the crust and the right amount of water, which is a little more than normal 1:1 water/rice ratio, and not go crazy with the heat, keeping control to not burn it! Nice video!

    This is similar to Korean nu rung ji. You get a stone pot that continues to cook the rice throughout the meal, then the crunchy bottom is eaten at the end.

    So all this time I have been eating Pegao? I'm from the Philippines and whenever there is enough rice I eat the crunchy part and I actually find it good

      I'm from Malaysia and of Chinese descent. We have a claypot rice dish in our culture and my parents always forbid me to eat the crunchy rice because they say those are burnt rice. Now I can retaliate and argue that "No, these are pegao! Don't make me waste good food, mom!"

    i used to unintentionally make pegao when i cooked rice in a pan, but i always threw the pan scrapings away because i was stupid and did not realize i was throwing away treasure. thank you abuela for showing me the way 😭

    in our country we call it tustado if it's in a caramelly state like that or tutong if it's more burnt and it's always accidental xD at least to my knowledge. although what we do if we have that sometimes is to have it as a left over and use it on fried rice the next morning for extra crispiness :)

    In Bolivia we make the rice in a similar way (usually toast the rice with chopped onions or garlic), but once it's done we turn off the fire before it starts "burning".
    I often forgot to turn it off fire and it would turn out like this, and my mom loved to eat that part. I always thought why is she eating the burnt rice? Maybe because she doesn't like to throw food or smth like that. But one time I also tried it and my god, it's delicious. Now from time to time I leave the fire for a bit more and me and my mom are always there scraping the oven to get that pegao while getting weird looks from my dad and sister lol.

    Like my people says.. Pegao is not something that people make it's just something that happens.. but like chef Ramsay says it's a staple.. lol rice stapled to the pan.. lol.. he just created a new dish by way of Puerto Ricans.. it's going to be a popular thing now

    Actually I wouldn't wash my rice. my experiments showed, for me, it makes no difference. Maybe if I use really starchy rice. But I have read a study on washing rice. And it seems modern rice has a lot of Arsen in it and especially if you eat rice practically everyday it could lead to problems when you get older. And washing it helps a lot of the Arsen in on the rice to be washed away.

      Thats different per culture. Some like their grains seperate, then you need to wash it a lot, others like it more sticky, then you wash it less or not at all.

    A lot of people mistake fried rice for pegao :) but it's not the same thing, not at all.

    Do I really need a gas stove or is a normal electric stove also enough?

      Do not need a gas stove. It will work with any stove. Also I imagine it would work with Basmati rice although have never tried.

    Came from Gordon Ramsay's video. While he did it a bit different it's essentially the same shit. I think some people just need to be pissed about shit all the time.
    Gordon even said traditional Pegao was already perfect. He was merely trying to do something a little different using the the base idea of frying the bottom and sides of the rice.

      The thing is that even tho it might seem the same to people with little knowledge on rice dishes, the way he did is totally off, didnt even used the correct tool, he essentially did buttered fried rice with chicken and pegao is kinda like the crust that forms of the cooked rice it is one of those happy accidents in life, also pegao isnt made with butter nor chicken thats just wrong makes it another dish....

    So Pegao is essentially burned rice that stuck to the bottom of the pan but only is not completly burned rather it cooked togheter with the rice wich is on top.
    Or maby it's just that Spain and Puerto Rico have a similar way of cooking rice and dous I see it happen sometimes when my mother makes rice not knowing what it is and so I labled it as burned rice when I was a kid and ut stuck with me ever since.

    Interesting but I would never imagine that it's considered to be as something tasty and no offense dear Puerto Ricans ... I just sometimes forget to turn off the fire and I overcook rice and as for me that dry and sticky rice much worse than ragularly cooked one.

    Even my grandma make better pegao , Gordon Ramsay is a disgrace even though I like to watch him cook like imagine if anyone make uk popular food and messed it up like Gordon did to pegao 😂😂😂

    So what's the BIG fuss?
    All I see is: a recipe for controlled burnt rice. Better yet ... someone making a meal from a pot of burnt rice.
    Some traditional meals have a lesson to them. This one here; A waste of Cooking Time.

I've been cooking since I was really young helping out my dad's store, and to cook for my family as well when my mom became ill. What I've always known is that we don't simply disregard another culture's dish just because it "looks" unappetizing to you. If you think with that mindset, I don't see what all those awards really do for you. It only makes you an insufferable elitist.
