    Spinach and Cream Cheese Crostini
    Cut and sauté 4 cloves of garlic and one small onion in butter. Add about 2 cups of fresh chopped spinach. Cool until wilted. Salt and pepper to taste. In a bowl combine the spinach mixture, 2 cups of cream cheese and 2 teaspoons of dill. Spread over slices of day old sliced bread. Top with grated cheddar cheese. Bake in 425 oven for 10 minutes.

    I'm a traditional Catholic mother of 7 (soon to be 8) homesteading in Kansas. I'm so excited to see another Catholic mom RUclipsr. You are doing such a wonderful job with your family ❤ I've been milling my flour for over a year now and there is a very helpful RUclips channel called Ellie's everyday that has really helped me get lovely 100% fresh milled loaves. We honestly prefer them to the white bread now.

    Your videos are so full of life. You are so inspiring and make me feel like I too, can do this. I love that you love your life. It's hard work but so rewarding.     What a nice memory about buttermilk, here in Belgium some 50 years ago we had often as dessert boiled buttermilk little tickned with some cornflower, we sweeted it with a little spoon of sugar in our plates, on friday we always eat eggs with potatoes, some vegetables and in a little butter warmed up the buttermilk with some salt and this was so good sauce on the Potatoes 😀

    Any tips for getting smooth quark? I've used Kates recipe a few times and the taste is great but my family complains about the lumpy texture that it gets when I hang it to strain (because the outside gets dryer than the inside). I've tried blending it with the hand blender (which works great on greek yogurt, but this was too thick) and I've tried the food processor too. I know exactly what you are talking about with the hopefulness that comes with the spring garden. Every year we plant and everything is gorgeous and weed free and I think, this is the year we're going to stay on top of all the weeding and pruning....and then August comes and you can't walk in the blight filled tomato jungle and the weeds are as tall as my children ;-)

      With the quark, I had luck not straining too much or adding back some whey to it. I can then use my immersion blender (since it’s thinner) and if I want a really thick texture I strain it for about an a hour a second time and then use my hand mixer to whip it. Hope that helps!

    I have had people ask me how In the world do I get so much done… like you I just stay busy… I wash our clothes by hand so the first thing I do every morning is get our clothes soaking… it’s just a matter of getting up and having a plan

      Yep and I love it.. no loud washing machines to listen to.. just the sound of the water, the clothes against the wood washboard and the hand wringer… just time to think pray and listen to what god has for me..
