I actually use wax to seal my jams and jellies! I have on my to do list to learn how to both water bath and pressure can too. These are skills my husband and his mother have, but I am yet to learn. My mother always used wax to seal her jams and jellies, so this is the method I currently use and has always worked for me! Thank you so much for spending time with me in my kitchen!! @@lettytinycreations We use honey for the elderberry syrup. If yours is not quite as sweet as needed I might try another recipe that asks for more honey. I am not an expert but certainly enjoy trying to help other families though our own experiences. I hope this is helpful.

From what I have read medicinal benefits are reduced when berries come into contact with heat. You still get some. If you are looking strictly for the medicinal benefits making a syrup with honey would probably be your best choice. I have done this too, but my family were not huge fans and everyone LOVES the jelly. I choose to make for us what is most used and enjoyed. Hope this helps!!
