I think the first video I saw from you was on Malcom's channel when you showed how to make competition ribs. You used a different technique then, but these look just as good! Love fall off the bone ribs so these looked amazing to me!
I did this similar cook on my Traeger using the butter bath a few weeks ago. I did 3/2 at 225 and I could barely keep them together. They fell apart maybe a little too easy. There was no way I could have left them on the full hour after I put the sauce on. Very tasty, you just have to take note that they will be fall off the bone, rather than pull of the bone. I love the butter bath, now I just have to get me more Heath Riles rubs!
I used to use the 3-2-1 method for ribs when I first started smoking meats. I’ve moved from that method as the ribs always come out overcooked. Hence Heath saying if you like “fall off the bone ribs” which means over cooked in my opinion. Great for beginners though! Love your vids!
This method is all I use because it is full proof and comes with the added benefit of being able to cook to a clock so I know exactly when they will be done. Also, a heads up on the Butter Bath. It works just as well with Pineapple juice and the ribs will have no pineapple taste. Apple juice is hard for me to get in those 8oz bottles at my store, so I took a chance one day and picked up a 4x6oz pack of Pineapple juice and Walla...lol! 6oz Pineapple juice+ 1/4 C Butter Bath=Perfecto! Pineapple juice is also a natural meat tenderizer....Thanks for sharing Heath, Much appreciated!
what temperature and how much longer if needed, I want the bones to just pull out by hand. this is a little more tougher than I prefer? i just bought your kit!! thanks
Cook at the same temp but a little longer. Just make sure the ribs hit a higher internal temp. You may be looking for more of a 209-210º internal temp if you're wanting fall off the bone.
I made these ribs and nothing was left but the bones. Thank you so much for helping us normal outdoor chefs to cook like a pro.

I usually sauce at there very end and put it back on for about 10-15 minutes to carmelize

Quick question if I inject my ribs with your pork injection can I also you butter bath when it's time to wrap or is that too much?
You can definitely do that. I actually just did it in Houston. I typically just wrap with Butter Bath and Wrap at most comps.
