Dimitra, thank you so much for this recipe! I made it for my church's Paschal celebration this weekend and it was a huge hit! One friend said it was the best Danish she'd ever had in her life. The mahleb was beautiful and I added a dash of cardamom. If I make it again I'll take your suggestion to double the cream cheese filling -- it was delicious. I don't have a mixer, so I kneaded the dough by hand. It was so sticky, though, I had to add quite a bit more flour to work with it. Is there any way around that, you think? Thank you again!
Ha, if she is strict with fasting, she won't eat it until NEXT Sunday (Pascha)... I'm looking forward to that 3:00am soup that they make at my mom's church, "mageiritsa" or something like that... It's delicious!
Not recommended. Xanthan gum has no flavor but may take on a chemical taste when cooked. Arabic gum also adds barely sny flavor, mostly used for viscosity. Just leave out mastic gum if you can't find it.
Fabulous and nearly fool proof. Unfortunately, I'm a fool. You should probably have mentioned to make the same number of slices down each side of the tsoureki. It might seem obvious to a non fool, but you have a wide audience.

I am going to have to put my nose in where it doesn't belong. Telling someone how to be or act according to your perspective is not right. You see it as goofy, we see it as endearing and natural. Why point out something that may put that person into a negative headspace. Dimitra doesn't need to question herself. You needed to have just kept your opinion to yourself.
