How To Make Oysters Rockefeller

    Watch along with this video featuring one of our online culinary school chefs to learn how to make your own Oysters Rockefeller at home. The only thing you’ll have to worry about with this recipe is over indulging!

    Ingredients
    4 oz unsalted butter
    2 garlic cloves minced
    1 oz bread crumbs, Panko
    2 shallots, chopped
    1 fl oz Pernod (or any anise flavor liquor)
    2 cups chopped fresh spinach
    2 tbsp olive oil
    ¼ cup grated Parmesan
    1 tbsp chopped parsley
    18 each oysters, on half shell
    Salt and pepper
    Rock salt
    Preparation
    1. Melt butter in skillet. Sautéed the garlic for 1 minute; Place bread crumbs in mixing bowl and add half the garlic butter. To the remaining butter in the skillet, add shallots and spinach, cook for 2 minutes until the spinach wilts. Deglaze the pan with Pernod. Season with salt and pepper. Allow the mixture to cool down.
    2. Finish the bread crumbs by adding the olive oil, Parmesan cheese and parsley, season with salt and pepper. Spoon spinach mixture on each oyster, followed with the bread crumb mixture.
    3. Sprinkle a baking pan with rock salt; arrange the oysters in the salt to steady them. Bake in a preheated oven at 450 degrees F for 10 minutes until golden brown. Served oysters with lemon wedges.

    Thank you for this. I like that it didn't have too much cream, keeps the oyster taste from being masked. I will have this in my christmas dinner menu.

    Thank you for being very understanding enough to explain of what to expect with how the oysters could look like. I'm very squeemish. Im the type of person to throw it away if it doesn't look a certain way. 🤗 this is unchartered territory for me. Very imformative.
    I'm curious as to what style oysters you used.

      He said in the beginning, these are Blue Points. Oysters are generally named for the place they are caught.

    I don’t know why they call this oysters Rockefeller. Oyster Rockefeller I think it’s spinach Gruyere cheese and a béchamel sauce? So you get some canned spinach you have the flour and the butter and the milk, there might be some bacon on it. I know it definitely has the béchamel and spinach.

      +Metemi That’s black artesian sea salt, is made by mixing wet sea salt with activated charcoal, then is evaporated.

    I left at the toaster oven. Up to that point tho, prep was just right. Sorry, big oven, hot broiler, 3-4 mins. Perfect.
