I watch The Lost Kitchen on magnolia network. Erin just has a gift of making great food and a passion to give the guest a heart touching once in a lifetime experience they will reflect on and talk about the rest of their life. She adds all the special touches/details that is super rare these days. It's s not all about the food but how it the whole experience made you feel. A lot of work and love goes into it and you feel it. That is what makes Erin, her mom, her husband, Ashley and Krista ...an amazing team! I wish them continued happiness and success!

Before her there was Alice Waters doing the same thing! As for no formal training what do you concider working in a restaurant. Starting from scratch doing washing dishes to cleaning veg then to working on the line to people then teaching you how to saute and sear meats. It's not like she just woke up one day and said I'm going to open a 50 seat restaurant.
I live in a town next to Freedom, Maine. I have never eaten here and probably never will because of the way they pick customers. I think this is ridiculous, pretty sad people across America have eaten there but I live next door and can’t.
Always dreamed of dining here some day. Not so much now. Walkie talkies to prepare the staff and service? Way to RTV for me. Get back to food and your roots.

To say that they need to get back to their roots is evidence of an inability to grasp the situation in its' entirety.
