Wash magoes and dry each one using a cloth....and then cut into fine pieces.....chilli ..garlic cut into small pieces......take a pan and add need oil it become hot add mustard curryleaf garlic into it....put into low flame and add chilli powder turmeric powder asafodea needed....mix it well then add needed salt then mix well and off the fire add the cut pieces it it and mix it well ....keep in a dry pot for longlife

+Sanjida Alam Hi Sanjida ji, thank you very much for writing me :) 1.Once the achaar preparation is done...keep it under the sunlight for a week, then store it at room temperature. 2.Always use dry spoon while open the jar...any wet thing create fungus on achar. 3.you may but not necessary. hi i want to know if it absolutely necessary to dry the mango or if I can use it raw without drying? if it must be dried, is there another way to dry the mango other than in the sun? for example in the oven on very low temperature! because I am in Northern Europe and autumn already started and there is no sun anymore here!
you may marinate the mango for 2-3 hours and then add all the grounded spices...store it in a jar and consume it up to 2-3 weeks....dried mango only increase the validity of pickle :)

It will work even without drying it in sunlight but it will not last for very long, even without drying it in sun it will last for 20-30 days if refrigerated properly :)
