    대만의 대표적인 간식인 펑리수를 만들었어요~
    파인애플에 설탕과 꿀을 넣고 졸여 만든 소를 쿠키 반죽으로 감싸 구워 한입 먹으면 파인애플의 달콤한 풍미가 입안 가득 퍼진답니다~~
    파인애플을 갈아서 만드는 경우도 있는데 저는 식감을 살리기 위해 작게 다져서 사용했어요~
    과자는 퍼석하게 잘 부서지는 편이라서 조심히 다뤄야 하고 굽고 완전히 식혀야 모양이 망가지지 않는 답니다~^^
    스콘같이 고소하고 담백한 편이라 파인애플과 잘 어울리는 것 같아요~
    저는 실리콘 틀이 있어서 사용했는데 휘낭시에 틀이나 머핀 틀 등등 다른 틀을 이용하시거나 모양을 잡아 그냥 구우셔도 될 것 같아요~
    고급스럽고 먹음직스러워 보이는 쿠키네요~~

    ▶틀 사이즈 Mold size : 5.4cm x 2.5cm 10개 분량
    ▶재료
    버터 90g
    슈가파우더 15g
    소금 조금
    달걀노른자 18g
    바닐라익스트랙 2g
    중력분 115g
    아몬드가루 10g
    옥수수전분 15g
    파인애플 300g
    설탕 35g
    소금 조금
    꿀 35g
    ▶레시피
    1. 버터를 부드럽게 풀고 슈가파우더, 소금을 넣고 섞은 뒤 달걀노른자, 바닐라익스트랙을 넣고 섞는다.
    2. 중력분, 아몬드가루, 옥수수전분을 체 쳐 넣고 한 덩이로 뭉칠 때까지 섞은 뒤 랩에 싸서 냉장실에서 1시간 정도 휴지시킨다.
    3. 파인애플을 작게 썰고 설탕과 소금과 함께 냄비에 넣고 끓이다가 꿀을 넣고 수분이 없이 졸인 뒤 식힌다.
    4. 반죽을 25g씩 나눠 틀에 넣고 가운데 파인애플을 넣은 뒤 윗면을 반죽으로 덮고 170도 예열된 오븐에서 15분 정도 굽는다.
    5. 틀에서 쿠키를 빼 오븐팬에 올리고 180도 오븐에서 10분 정도 굽고 식힌다.
    ▶Ingredients
    90g Unsalted butter
    15g Powdered sugar
    a pinch of Salt
    18g Egg yolk
    2g Vanilla extract
    115g Plain flour
    10g Almond powder
    15g Corn starch
    300g Pineapple
    35g Sugar
    a pinch of Salt
    35g Honey

      저도 머핀틀이 있는데 실리콘은 아니고 머핀 유산지 깔아서 거기에 반죽 넣어도 될까요?

    Hi, I made this recipe the other day and they turned out fantastic! Some tips though:
    1. The pineapple I used was about 700g worth of diced pineapple so you could probably make about 2 batches of the jam.
    2. I don't think the cook time for the jam was mentioned so I cooked the pineapple, sugar, and honey down on the stove until all the water had evaporated. Don't worry about the pineapple not browning, mine turned a kind of amber color and thickened after I let it cool in the fridge.
    3. For the dough, I made my own powdered sugar by putting granulated white sugar in a coffee grinder. Regular powdered sugar from the store usually contains corn starch and the recipe already had corn starch so I didn't want to risk drying the dough out.
    4. Make sure you ONLY use the egg yolk. I didn't make the mistake of adding the white but if you do it can alter the texture. You don't have to use exactly 18g egg yolk though, I used egg yolks from large eggs and each was about 16 or 17g.
    5. I used a mold with indentations like the ones in the video but it was in the form of a muffin pan and the molds were a bit bigger. Regardless of what size your mold is, make sure you don't add too much dough, it will drown out the pineapple flavor, be too dry, and be a bit raw inside.
    6. I didn't grease my molds or anything, simply make sure if you're using a nonstick mold to put a plate or something on top of the mold and flip it over while the tarts are still warm (similar to the way you would flip a cake onto a plate to get it out of the mold). If you wait until the tarts are cooled, they won't come out. If that happens, simply warm them up in the oven again and they should come out easily.
    7. Make sure you handle them gently/carefully when transferring to another pan to toast, they're quite crumbly.
    8. I got about 5 or 6 tarts (although my molds were bigger than the ones in the video), so if you think you'd like them a lot, I would recommend doubling or tripling the recipe.

      Can you use almond flour instead of almond powder?

      Cuz the ratio of powder sugar is too low that it causes the dough to be crumble, but the filling is sweetened enough

    Similar to Kue Nastar in Indonesia 😍 but we don't dice the pineapple, we make the pineapple jam by finely grate the fresh pineapple then make the jam just like you did on the video, also adding cinnamon stick. Taste so yummy 😍🤤

    in Indonesia, we make the pineapple jam with grated pineapple, sugar, cinnammons and cloves for extra flavour. you can try it and taste the difference 😃

    Bake 170C or 350F for 15 minutes.
