When me and my family visited Taiwan, we bought so many pineapple cakes, at first I was skeptical because I never tried it before,but when I tasted the free sample, the thing crumbled in my mouth BUT in a good way. We also visited a workshop thingy where you can create your own pineapple cake but the dough and filling were prepped, some of mine turned out to be crumbly but, oh well 😂. I was obsessed and after the trip we brought home so many, I was sad because my parents decided to give them to our relatives ;'(
Guys you have to try this the results are awesome even if you don’t have a pineapple mold and use wheat flour,I used less sugar but it worked well! This cookie recipe is amazing! So crumbly and sweet delicious!

J LL if you don't put too much pinapple filling inside, it won't crack as easily! There were some cracks in the dough once I took them out of the oven but they still looked nice and the whole thing (the dough and the filling) remained in once piece easily :)) so yes, you can definitely do this without the mould! :)
