    Hi Shaye, I wanted to let you know that if you want the cream on top and are willing to sweeten it then all you do is get a mug (copper or stainless steel) and put a few tablespoons of sugar. When the first drops of coffee begin to come up pour it over the sugar, just a bit, try a teaspoon or so. Begin to stir or beat like you would eggs. You want for the sugar and coffee to blend to a thick consistency, smooth but thick. When coffee is done pour it over the sugar/coffee blend and you’ll get that thick crema on top. This is the way you make Cuban coffee. I’m sure RUclips has how to vids.I have the same coffee pot, have had all of them, there is nothing like this beauty imo.

      Yes, we do this sometimes, although we primarily don't add any sugar into our coffee. It's a special treat when we do though!

      ​@@theelliotthomesteadHi Shaye: another Cuban here, we know that "Cafetera" very well. I have a Delonghi espresso maker, model: Dedica and I bought it because it is quite narrow and takes up little space, and I highly recommend it, it makes very good espresso with a lot of foam.

    My husband and I actually own a small coffee roasting business that we run out of our home, so our set up IS a little different. 😊 But we started with a countertop roaster that moves the beans with an auger. We’ve had several people stop by our booth at the farmers markets to chat about roasting, and a lot of them use a popcorn popper.
    I think the moka pot is such a great alternative to an espresso machine!

      @@copperhousefarm4794 My husband is the one who does the roasting so I asked him. He says it depends on the bean, but he watches for first crack to start winding down before he pulls the beans for a medium roast. It’s less to do with color, and more to do with time and temperature

    Shaye you take the first table spoon of coffee from your pot and add it to about 3 Tbsp sugar you want it thick like syrup. Whip it with a very small Espresso spoon until foamy. This goes on top of your coffee for that beautiful creamy foam with a hint of sweet. I love using my espresso pot 🥰.

    This was so interesting, thanks! My coffee grinder was a gift I received in 1987, so 35 years old now, and still going strong! During a hurricane back in Oct, we lost power, so I had to grind the beans caveman style, and made a pot of cowboy coffee on a Coleman stove - best coffee I've had in years, lol.

    Home roasted is the best. My husband and I have been roasting our own coffee for 22 years now. My wonderful Father is an engineer and he made a coffee bean roaster with my husband. We are still using it and still purchase 50% of our beans from Sweet Maria's great company.

    Also, I love how Italy invaded your life, especially the kitchen!
    I think I'm following your channel for some three years now... I love seeing how you grow as a person, how you learn new stuff and how you try to implement your beliefs in your everydays. On podcast, you talk about discipline and choosing your heart and in cooking delicious food for your family (but also in handling the homestead, the workshops, the Cooking Community, the art, trying to make your home both beautiful and functional...) I really can see both the discipline and the heart... You have a goal, an idea (or thousand ideas =)!) and you try to go for it step by step, day by day. Thank you for the inspiration!

    Very similar to what I do but with a few nuances. I use a hand cranked popcorn popper and a hand cranked grinder. A little tip you may want to try is let your beans off gas for around 12 hrs before brewing and give your coffee a few minutes to bloom once it starts to come out the spout. I find these little tweaks make a little difference in my mock pot coffee.

    I love it!! I have a couple Moka pots .. made in Italy various shapes ... really fun and so delicious! thats what we used in our little cabin in fairbanks alaska when we were first married.. the esspresso machine became the thing ... but we went back to the simple.... the whole process is a slowed down pleasure!! Please show us your new cabinet!!!

    2 coffee lovers here. We have many coffee making setup. Our most favorite way of making coffee is with an aeropress! The coffee just taste so much better. It also helps to have high quality coffee beans like Ocozo Coautla Gesha from Chiapas, Mexico😊

    My husband roasts our beans at home too using a roaster. He had a lot of bean varieties. Vietnamese is my favourite by far the most flavourful for my tastes

    I need a moka pot. I've had to make coffee on top of our wood stove in ice storms when the power goes down. Seems like that would be a great way to do it.

When you asked for suggestions about what your viewers may want to see in the coming year, I thought would she think I was nutty if I said how about a coffee video. 😂. Thanks for the instructions. I actually bought a mocha pot last year and have yet to use it. I bought a Nespresso machine and use that in addition to a drip or French press. The biscotti looked yummy. ❤

    Many years ago our friends brought back one of those small espresso pots from Italy. We made it in the evenings for a few years. It has been a long time since I have put that pot on the stove and had forgotten how to make it until your video. I also still have the small cups they brought with them. A great video. Simple works well. ❤

    Oh my gosh, I bought one of these and didn't realize 9 cups was espresso, not coffee. I thought it was a coffee pot. I saw how small the chamber was on the bottom and thought, "Gee, that will make one cup of coffee for me." I filled it up with grinds, percolated it, and poured myself a big cup of warm coffee, and drank three of them on the first day. Wowsers I got a lot done that day and the four days after! Finally, my daughter came over and told me I was drinking the caffeine of 9 cups of coffee every time I filled my mug. I'm an expert now in the caffeine jitterbug dance!

    I love watching anything coffee and how people do it. Years ago when we lived off grid, James bought me a espresso,pot that is very similar to a Moka pot but it can steam milk as well. I use it still when the power goes off. I have a Italian espresso machine and a regular Moka pot as well. You can never have too many espresso pots right. I have only roasted beans once and I loved doing it. I put them in a cast iron pan in the oven and moved the pan around every couple mins. I didn’t know what I was doing….but now I want to try it again. So interesting your roaster set up. Thanks guys ❄️🇨🇦❄️

    We do the same thing but use a manual crank-style popcorn popper. And we finally broke down and got a milk frother-we got the one made by Instant Pot and it's AWESOME. We just got back from italy and had considered getting an espresso machine, until we remembered our little Bialetti in a bin in the basement-no going back!

    2) I love this video as I have wanted to learn how to roast our own beans! And I can’t wait, we have friends who are missionaries in Italy and when they visit they’ve taught me how to make coffee the Italian way using the Bialetti. It’s my favorite, and honestly the best way, to have a fancy cup of espresso

    Stuart’s teaching skills mixed in with his humor made for a great video! Loved this one. I am Puerto Rican and grew up using Moka Pots (or ‘greca’, as we call it). It does make fantastic espresso! Bialetti also has Stainless Steel moka pots. I have a stainless steel one for the everyday and the regular for large family gatherings. They both work like a charm. I am going to explore roasting my own beans! I get my coffee (already roasted) from Italy, but I like the idea of a fresh roast. Thanks so much for the video! ♥️

    My husband began roasting coffee when we were courting long distance so he mailed me his beans! It was so special and I was spoiled! He started by using a wok over an outdoor gas burner, then we upgraded to a machine that looks like a stir crazy popcorn maker, but it’s actually a coffee roaster. It’s hard to get coffee in town when we’re so used to the glorious coffee we make!
    We do pour over but we have a moka pot but I haven’t used it! I’m going to give it a try today!

    I love my moka pot! Espresso comes out so smooth and delicious! I use a heat diffuser to avoid burning the handle.
    I also change the filter and seal regularly. ❤️☕️
    I use a frother to get that cream on top.

    I bought the same Braun coffee grinder back in the 90s. I'm still using mine too. Still works great--better than a friends burr grinder. I also enjoyed seeing Stuart in your video. I think one of the first videos of yours I watched featured Stuart making you both a cuppa and you were sitting under a pergola or something outside. It was really cool. I have been a fan since.     LOVE this video Shaye and Stew! I love coffee! Now I know how to use these pots that I keep seeing at thrift stores for very cheap! Thanks! Also I have been making biscotti all month of December as part of Christmas gift baskets. I have perfected the cranberry orange walnut flavors and it is amazing with a nice cuppa! Your biscotti also looks delicious and may add that touch of mocha when the chocolate touches the liquid. Your kitchen looks so streamlined now, just beautiful.

    Hi Shaye, I have been enjoying your presentations. I don’t drink espresso. But I also started percolating my coffee on top of the stove. I also have a small kitchen, but I also choose to do that because the coffee makers are all made out of plastic and I try to avoid that. It does take a lot longer but it tastes so much better than drip coffee! It takes me 20 minutes to slowly brew my coffee (if you perk coffee too fast on a high temperature, it gets a burnt taste. You’re never supposed to actually let it come to a boil. but I use that time to do my meditation and prayer which works out great, the other thing I really love about it is it gets my whole kitchen, smelling like fresh brewed coffee, which is one of the best smells in the world, right?

    Shaye, is your Moka pot made with stainless steel or aluminum? Some of the pots I have seen in stores are made with aluminum, which I am not interested in, due to the soft quality of the metal. It can transfer very easily into foods.

      It doesn’t transfer enough into your coffee to harm you. I’ve done a ton of research on the matter.

      @@rachelsoffel2330 I’m glad to see there are stainless steel options. After decades of using deodorant with aluminum, I’m not going to take chances with more aluminum coming through my food and drinks. Thanks.

We call it 'La Grekka' which I believe refers to one of the companies that makes it. Lol! Love my expresso with a dash evaporated milk. Yummmm. 😊

    We have one of these mocha makers, and I have never used it because I didn't know how!! We use a stove top percolator for our coffee, which is a very similar method and our coffee is always fantastic.

    I’m super curious to learn more about your thoughts on the aluminum body of the moka pot? *not judging* Genuinely curious because I have the same moka pot but I haven’t used it in years due to the aluminum body.

    I also get my coffee beans from Sweet Maria's. And I use a jiffy pop popcorn popper that I got at my local Ace Hardware store. I roast my beans on our propane BBQ on our deck and I put the roasted beans in a colander and shake it repeatedly until all the chafe is gone.

    I found a moka pot at an estate stale. I grabbed it but I have no idea how to use it. I ditched our coffeemaker a couple of years ago and we only use a percolator which makes delicious coffee, but I would love to try the moka pot. Thanks for sharing how to use it.

    I use Moka pots too. I have a Moka pot trivet on my gas stovetop because otherwise the pot isn’t steady. I believe they are available on Amazon.

    Hey! If you roast your beans a day or even a few days before you use them, your finished product will be even better! Offgassing takes much longer than just a few minutes.

    The same brand has an espresso moka-pot if you will.. it’s called the Brikka and it is more similar to a tru espresso, with crema and all!

    I use a whirly-gig popcorn popper on my stove to roast coffee. You keep turning the handle so the beans don't burn, it has a top that flops down to prevent chafe from flying out all over the kitchen, and because you're turning it, there is very little smoke. I suppose that's the off grid method because you don't need electricity, only a heat source.

    I used the popper when i first learned and could never get the dark roast we love. The oven is our best roasting option yes with a cast iron pan.

    Hi Shaye! Since raw milk doesn’t froth hardly at all, I would love to know how you make your lattes! I just recently switched to raw milk and I used to love the fluffy frothed milk in my coffee but now it doesn’t do that!     Just a slight caution about using aluminum because it's considered one of the more dangerous heavy metals. People use it because it's very cheap but you don't want to jeopardize your health. ❤️ 🙏

    We still use a moka pot in our house since childhood, my aunt also uses a strainer which is how she grew up making coffee and it comes out really good too, we usually add some nutmeg, and or cinnamon, an added touch. I can't drink coffee though unfortunately gives me the jitters, only once in a blue, so herbal teas is my thing,

    Love this vid! I’m always up for learning about new ways of doing things. I’ve never tried roasting beans but I’m sure I can figure it out. I’ll have to cast iron pan it, since that’s what I can get my hands on. I don’t have Stu’s cool popcorn/colander setup 😊 👍🏻. Cool to see how a Moka Pot works!
