Today I am making 3 dishes based on 1400's Bohemia and Kingdom Come Deliverance 2 - a new game from Warhorse Studios following the story of Henry of Skalitz and his quest to become the best Henry he can be.

Breakfast -
Pie Crust:
1.5Cups AP Flour
10tbsp unsalted butter
3 tbsp sugar
1tsp salt
1 egg
2-3 tbsp cold water
Filling:
1 Apple, chopped
1 Pear, chopped
1/4 cup raisins
6-8 dates
6-8 figs
4-5 prunes
1/4 tsp all spice
1/4 tsp clove
1/4 tsp cinnamon
2 cups red wine
pinch of salt
Eggs:
2 farm fresh eggs
2 tbsp unsalted butter
1 sprig fresh tyme
2-3 fresh sage leaves
Salt + Pepper to taste
Lunch -
2 lbs lamb shoulder, 2" chunks
2 carrots, large dice
1 parsnip, large dice
1 potato, large dice
1 cup AP flour
6bsp unsalted butter
32 oz beef broth
1/2 tbsp dried fennel
1tsp caraway seeds
1 tbsp chopped thyme
1 tbsp dried parsley
1-2 tbsp salt (to taste)
1 tbsp black pepper
Dinner -
2 -8oz pork chops or loins
1 cup cooked fruit (before mashing from breakfast)
2 tbsp butter
2 springs fresh thyme
sauerkraut

Edit: Yes, I added a potato and used some sugar. The books I used had recipes from the 1450s-1600s so there may have been some overlap.

Great video, and I’m really happy for you about this collaboration. I absolutely enjoyed the recipes! However, as a native Czech, I have a small note about your stew. The foundation of almost every Czech dish is salt, pepper, onion, and allspice with bay leaf, which we add to almost every base. You could try adding it next time to bring it one step closer to Czech flavors. Fantastic recipes that truly honor Czech tastes!

@@CHEFPKR As another Czech here, I would also like to add that usually, celeriac is also added in stews. Fruits I am not going to mention as it was already done many times in the comments, but for frying, most of the time lard was used.

Dates back in the medieval Europe were worth more than gold! Only kings and other royalty had them occasionally, someone like Henry would have never tasted it once in his life.
Your mysterious tabletop fire-maker is fascinating, but not all of us have one. I would actually be interested to see what dishes you come up with for cooking over an actual open, wood-fired flame outdoors with just a skillet and a dutch oven.

Nice thematical video, for the fruit i dont fully agree with the availability of dates and pinenuts in medieval times. For the rest great cleaver technique and looks very tasty.

I'm reminded of a simple pork loin dish, with sautéed apple, that I haven't made in years. I called it pork apple cinnamon. With steamed carrots on the side too. It's such a sweet dish. Thanks, now I want to try braised fruits!

While stupidly expansive, it is a great meal for Henry.

@@CHEFPKR you can substitute mace with twice the amount of nutmeg, just be careful so you don't poison yourself, nutmeg is poisonous in large amounts

Guys, I feel like chef might be hiding something with that flame apparatus.
I dont wanna be a stickler but dates and figs would be highly unlikely to be seen by czech person in his lifetime. They dont grow in Czechia (or in any nearby country) and to this day they are still more of a curiosity.

I would re-season first, then make sure your pan is pretty hot and the eggs are not super cold. Use a good amount of fat.
Cast iron can cook really well, but it needs multiple steps

Where can I eat it / take my money
Sugar in the dough is historically dubious. We're looking at a time where the stuff had to still be imported from Asia, making it prohibitively expensive. Only the wealthiest folks would use it as a spice at the time, and certainly not in a dough. It only became cheaper in the colonial era, when sugar started being made in colonial plantations. If you want more plausible sweetener: Honey or a bit of sweet grape must.
Also, the potato... I probably don't need to tell you why that's not gonna be found in a 15th century Bohemian stew.
