When I used to live my grandmother many, many years ago, I remember I soaked (brined) some dark meat chicken in salt and water for 24 hours and fried them in one of my grandma's cast iron skillet. I lightly seasoned the flour with garlic powder, salt, onion powder and pepper. That was the best fried chicken I ever made. No joke.

Worked in an Ingles deli once and we brined the chicken overnight and it was so tasty and crispy. I don’t know why we don’t do it now at home! Also- what’s your thoughts on pickle juice brine?

Finally someone who cooks fried chicken the way my momma and grandparents used to. Back then, all they used was flour, salt and pepper, and lard. Best crispy fried chicken ever! Nothing today compares. But back then chicken was farm raised and tastes nothing like what they sell in grocery stores today.

GOT THAT RIGHT ! MY GRANDMOTHER, GREAT AUNT AND ONE OF MY AUNTIES LIVED IN REDDING, CA...TALK ABOUT SELF RELIANT WOMEN KNOWING HOW TO COOK? THEY GREW EVERYTHING AND THEIR COOKING WAS OUT OF THIS WORLD..I REMEMBER DURING THE SUMMER STAYING THERE WITH THEM, AND I LEARNED SO MUCH. MY GRANDMOTHER PASSED WHEN I WAS 13 AND I WAS DEVASTATED. WHEN I WASN'T THERE DURING THE SUMMER, I USED TO WRITE HER A LETTER ONCE A WEEK AND SHE ALWAYS WROTE BACK. I'M IN MY MID 60'S AND STILL MISS HER BEYOND WORDS
      .
THREE PHENOMENAL WOMEN. LOVED AND MISS THEM SO MUCH.
P.S. I KNOW ABOUT THE PAPER BAGS..MY AUNTS TAUGHT ME TO SHAKE THE CHICKEN IN THEM FOR FRYING.
I STILL USE THEM TO THIS DAY, AND MY AUNTS ALSO USED TO USE THEM TO PUT THE CHICKEN ON AFTER FRYING TO SOAK UP THE GREASE AND THEN PUT THEM ON METAL TRAYS IN A LOW TEMP OVEN TO KEEP THE CHICKEN WARM.
CHEF JEFFREY: DO YOU REMEMBER WHAT CHOW CHOW IS?
      AND CHESS PIE?
I LEARNED HOW TO MAKE IT WHEN I WAS LITTLE. GOOD STUFF

@@valerieneal2747 You bring back beautiful memories of those wonderful Aunties and Grandmas. The way they use to prepare and cook that chicken. Bro Jeffrey, we sure appreciate you sharing this with us also.
I can still picture Grammy putting that golden fried chicken on the table. A pan of baked sweet potatoes fresh out the stash always accompanied the meals. The wood stove
had a built in warmer on top where the home
Cured bacon was kept. The smells of hot
Biscuits and sugar cane syrup makes you wonder why did we ever gave up growing our own food and raising our own livestock. We did not have or need freaking EBT.

👍 I salt water brine my chicken and turkeys..I use peanut oil. Yes I strain and reuse my oil. Chef, you are full of knowledge. I'd sit watch my Great, and Grandmother's, I didn't say a word, with my eagle eyes I watched and learned, they taught my mom, I'd watch her too, if I had questions, I'd wait till they were done. Then ask questions. I season my flour, because the meat been soaking in that brine. Yes I know about those brown paper bags. Cooking don't have be complicated. Too many over season. I just enjoy watching you cook and teach. My Grand Dot in her 90s. I have aunt's, great aunt's who still have gardens, chickens, hogs, goats, even rabbits. They eat what they raise. I thank God everyday that they are still in my life, teaching me. Not just about cooking but herbs, that keep me healthy. I tell my friends 40 and under find a old school adult to teach you and pass it on. They didn't have a lot seasoning, salt, pepper, garlic, even onions to add flavor, don't leave out the apple cider vinegar. I believe that's why they live so long, keeping active, eating what they raise, or grow. Butter, lard is what they used. They worked too hard so they was not over weight. I love watching you, and I learn something each time. No matter how much you think you know, there's always someone who can show you new things, maybe a better way to cook. Chef, I appreciate you helping, teaching others old school ways.👍👏👏👏. Love, respect and positivity always.✌️🖖🕯️💕✨🙏🌻🦋🌠🫶🙂👋. Vee.🤗👣.

Morning, afternoon and good evening, Chef Jeffrey!😄💕
I have a question for you!
"How is It, That A Northern Woman Can Make Southern Fried Chicken Yet, She Has Never Been To The South?"
    Her mother was from Virginia!
....and she learned from her mother!😆
I make my chicken just like that.
I clean it first, then I do a salt brine.
From there, I season my flour that I am gonna coat my chicken pieces with, and then I fry them. No Eggs!
I don't understand why people even bother with that.
This video brought back many pleasant memories for me, thank you!😆
    Man, you're something else!😏❤
    Have a great one!
    Until next time...

There is nothing like a well season fried chicken. When you take your time to prep and season your meats the day before cooking it. You will need to give the cook a his/her their praise because there's nothing like good fried chicken 🍗. Also, you know that your fried chicken is good is when you are licking or chewing on the bones 😋. The favoring went down into the bones and you can't stop eating it. 😋

Found your channel and love it. Subbed. This is the kind of thing I grew up with, but never really thought of it as anything other than Southern eating. I thought everyone ate like this till I joined the Navy. Learned different, still never found a better type of eating. I like other countries traditional foods, but this is down home eating. When I don't get it for a while I miss it.
Nothing compares to traditional Southern foods. Soul food is everyman food down South. Depending on which side of the tracks you came up on. Though in truth even the rich folks liked it. Have a nice weekend chef and look forward to more of your entertaining and instructional videos.

Yes, indeed! You have to brine that bird. Then you don't have to add every seasoning in your pantry to try to add flavor. Great video.

    Good morning, Chef Jeffrey.
That golden brown chicken looks awesome.
I'll definitely try the brine method...
I agree, I couldn't cook in makeup, dress clothes etc.
I'm not messing up my good clothes and I don't wear makeup 🤣
Thanks for another great video. 👍
    Enjoy your Wednesday.
