Many years ago i bought a book about baking. Like so the basics. There in there was a recepy for little table breads with like peaces bacon and mustard, another one with chocolat chips in it. Loved to bake different kinds of breads and sandwiches and so on.
I love the Rocco the finish it gives is so rustic. We had the 3 deck one. we didn't steam it because when we had the oven full the steam came out of the bread with the vents closed after opened it up to get the moisture out. Also under the stone added 2 metal rods because the elements were extremely hot.

Thanks for the info! My pressure sprayer is coming in tomorrow. I just bought a small pizza oven because a rofco (any model) takes six months to be delivered due to covid. I figured a pizza oven is not all that different and they also come in 230 volt. So excited to give it a try tomorrow!!
Thanks for the videos. I am about to take the leap with my micro bakery. Still figuring out where to get an oven from. Anyway can you do a video one how you manage your starter? Or does it manage you? I am curious about timings.
If you wanna splurge more I highly recommend making a DIY proofing box they make it so much easier to have consistent results and reliable timings! I found them especially helpful in my drafty flat since I don't really have a reliable warm area to stick dough
You should try to spray the water after you put the loaf in the your oven. That way would retain more steam in the oven and should get a better result. I really like your video, keep on baking!

Just curious, I like Richard Bertinet and Sarah Owens, or Chad Robertson or even Ken Forkish , also Rose Levy Beranbaum, I only ask because I’m learning myself and looking for the perfect loaf, a lifelong quest as far as I’m concerned. Your loaves look pretty good. Keep up the great work!
Hi John, thank you! I do follow Chad Robertson mainly for his technique as didn't have much luck with Tartine's sourdough recipe (I think the flour in the US is quite different from ours in the UK); I also follow Vanessa Kimble, Sourdough Sophia, Edd Kimber, Kitty Tait :)

I am wondering what's so special about the oven you are using? It's looks really small so propably it can fits 2 loafs at the time like a regular home oven with baking stone or steel in it. What are the biggest advantages of it? Does it make sense for home hobby baker to invest in that kind of oven?
@@JackFromTheKitchen it is small but was the only brick oven I could get at the time as the waiting list is 7months + long especially for the bigger rofcos which do 12 loaves + at a time. Biggest advantage would be that it is efficient and you can get the heat as high as 300 degrees celsius; once the stone heats up it retains much more of the heat than a conventional oven especially if you're opening and closing the door. So this is important for baking several batches over the course of a few hours! It depends how many loaves you wish to bake at a time but would recommend if you are an enthusiastic home baker! Hope that helps :)

Hi Hayley, thank you so much! That's wonderful - can you tell me a bit more about your business? For me, I asked my friends and neighbours to spread the word with their local friends by sharing my instagram account and website... I also have started adding small samples of my loaves or sweet treats & a note with my details on in customer's packages for them to share with their neighbours etc to spread the word! Hope that helps x

It's in its very early stages at the moment and we are just selling 100% natural wax melts (no glitters or colourants and eco-friendly packaging) but the hope is to quickly expand to other products with the same ethos. We especially want to do homemade products to help with eczema/dry skin as this is something I suffer with!! We have asked friends/family to share social media posts but it seems very slow, I guess this will always be the case until you have started building up good reviews etc. I like the idea of the samples though.. will definitely look into whether we can put little samples into peoples boxes with the suggestion that they may like to pass these onto friends/family! thank you :)

You should get a timer to go on your plug so the oven is ready and heated when you get up

Have you seen the RM2020 oven from Rackmaster? Seems to be made really well. Local UK company. Might be worth the investment over a bigger Rofco!
