- In this video, I show you how to make the Southern Classic: Watermelon wine.
Recipe:
1 large watermelon

1 tsp acid blend

Platt R, You can use citric acid to pH your product. If you want a stronger watermelon flavor use 2 watermelons and juice down and filter. Add spring water to 1.5 gallons. Simmer down to 1 gallon liquid. Basically making a concentrate. Take gravity reading and use raw unrefined sugar to bring up to desired gravity.

WHAT'D MAKE A BETTER WINE IF WE USE THE CHAMPAGNE YEAST?
Champagne yeast will give you a good, clean fermentation but your wine will be a little dry.

You could use a juicer if you like.

They would probably work.
Can you use juice that has been frozen? I'm planning to grow my own melons but can't guarantee that we will get multiple ripe melons at once and our refrigerator can't store multiple melons waiting for more to ripen. So can I juice then freeze them, then start the process once I have enough juice?
That should work just fine. I have made several batches from concentrate.
I use a strawberry watermelon juice in a 2qt bottle you buy at the store take two cup of juice out add a cup and a half of sugar to it and a half top of bread yeast and it cone out amazing usally around 18%
I just recanted my first pruno batch today I let mine sit slightly longer and as it took time to ferment i took time to watch more of your how to videos and a few other peoples as well the one gentleman that I watched said that apples are naturally high in yeast so when making apple pruno should I use less yeast?
You really don't need to adjust the yeast. If you buy your apples at the store, most likely any yeast on the skin has been washed off.
Hi everyone I'm new to wine making and now trying to get a feel of things. Do you need to use campden tablets with this mix ? If yes when and how is the best time to add them
I didn't use them in the batch. You don't have to use them. You would add in Campden tablets before fermentation and let it sit for 24 hours.

Thanks . The wine came out thanks bro. Only problem I have is the wine smells like the fermented fruit. If allowed to sit for the 3 month or more will the scent go away?? I have racked it twice to get rid of the sediment. Any suggestions?
@@dexterholder7057 Racking does help and letting set longer helps a little but at the end of the day it is fermented juice.
How long would you recommend the second fermentation go?

@@PlattR thanks for the feedback! I have a bit of air space between the surface of my wine and the top of the carboy. I checked on it this morning, and am still seeing air bubbles in the airlock (although slow). Is this extra airspace bad for the wine or final product?
@@matthewahlberg4896 As long as its not excessive, you should be fine.
@@PlattR thanks. Looking at it, looks about a quarter - half gallon worth of air space. It’s been in its second fermentation for about a month and a half and is looking pretty good. Fermentation seems to have slowed down a bit. Do you think the flavor will be off? If so, no big deal. Learning experience for me
@@matthewahlberg4896 Fermentation should be slowing. At this point, the yeast is starting to die off but those dead yeast cells will absorbs certain by-products of fermentation.
This will actually help the flavor.
should I put the wine yeast or the yeast I want after the acid and nutrients or before? Also I heard you need to let Air in but not let it out, is that true and how do you did with this recipe? Also you said 2 weeks in primary and 6 weeks in secondary what does that mean as well? I'm new to this sorry XDD
Put in the yeast last. You want your fermenter to release the CO2 that is being produced but not let in oxygen. Basically after two weeks you will transfer the liquid into another fermenter while leaving the dead yeast on the bottom of the original container. This helps clear your wine.

You don't need the acid blend but you do need the yeast.
A little tip you should blend it in the blender and then pour through a metal strainer and you'll have less solid the deal with then you can pour through cheesecloth as well the pope actually slows down the fermentation process
Is cane sugar required or is beet sugar ok?
Either will work.
Make it easier. Juice, 2 cups of sugar half of teaspoon of rapid bread yeast. Let sit till the bubbles stop. Rack then drink

I first watched Mr. Platt and I used apple juice instead of grape. As of now I have probably made over 50 2 qt. bottles(or an occasional gallon) of it! I live in Florida and it is now July, HOT! Time for a change of flavor! So... I am thinking watermelon? I saw a strawberry video... ? Any thoughts on a really good fruit tasting flavor would B very much helpful and appreciated! That is a good option.
What is secondary
Secondary fermentation. Its basically moving the liquid into another container. This removes the liquid from the dead yeast and also helps switch the yeast into a different phase which creates different chemical reactions.
shame you dont show the end result, does it change color? does it still have a melon sweet taste? 130gp is like 17% alc that is nuts ,should be 12% max and the rest sugar but you dont talk about halting fermentation
